I will never turn down a good snack mix. Game day, family game night, or tucked into a little jar as a gift, it’s always a hit. This one has the perfect salty bite with just a little heat. – 2 cups cheez-its – 2 cups nacho goldfish – 2 cups mini saltines – 1 cup small pretzels – ½ cup freshly grated parmesan – 2 tablespoons red pepper flakes – 1 teaspoon garlic powder – ¼ teaspoon black pepper – ⅓ cup avocado oil (or olive oil) Toss everything together, drizzle with oil, mix well, and bake at 250° for about 15 minutes. Tonight burrito bowls will be served. Easy, healthy and inexpensive! And even better is that my rice cooker (for the rice)and instant pot (for the beans)do all the work and keep everything warm. All I have left to do is cut up the veggies. I made the chipotle sauce this morning. I made a milder cilantro lime sauce as well! Posting this a few days late because I honestly didn’t know how to write this. Last year was one of the hardest of my life. Being diagnosed with breast cancer, losing my breasts and my hair changed me. Physically, emotionally, deeply. Some days I still cry in the shower, grieving the body I once knew. People often tell me I’m strong or brave, but the truth is… there were days I didn’t feel like either. I was just surviving. And sometimes, that has to be enough. As this new year unfolds, I know there will be more challenges ahead. Another surgery and potential medications with heavy side effects. But I also know I am surrounded by love, and have a support system I’m endlessly grateful for. I’m choosing to focus on the positives, gentle healing, meaningful moments at home, simple joys, and a few fun trips to look forward to. To every single one of you who has supported me here, through likes, comments, messages, and shares, thank you so much. Creativity brings me so much joy, and I hope you’ll continue to enjoy being here. Garlic & Herb Olive Oil Pull-Apart Bread 🌿 Soft bread layered with garlic, herbs, olive oil, and a touch of honey. Perfect for tearing, dipping, and sharing. Ingredients Dough • 3 cups flour • 2 tsp instant yeast • 1 tsp salt • 1 tbsp honey • ¼ cup olive oil • 1 cup warm water Garlic Herb Layer • 3–4 tbsp olive oil • 2 garlic cloves, minced • 1 tsp rosemary or thyme • drizzle honey • flaky salt Olive Oil Balsamic Dip • ¼ cup olive oil • 1–2 tbsp balsamic vinegar • pinch flaky salt Instructions 1. Mix warm water, honey & yeast. Let sit 5 min. 2. Add flour, salt & olive oil. Knead until smooth. 3. Let rise 45–60 min. 4. Roll dough into rectangle. Brush with olive oil, garlic, herbs & honey. 5. Cut into squares. Stack 2–3 squares and place in loaf pan. 6. Rest 15 min. Bake 375°F / 190°C for 25–30 min. 7. Brush with olive oil & sprinkle flaky salt. 8. I do a quick clean and dust of our home, put on the diffusers (today was Citrus Fresh) set out some simple snack (today was organic corn chips and salsa, hummus, almond crackers, organic cashews and almonds) I was so hoping it wouldn’t start raining so we could be on the deck, but right before our friends arrived…. Rain. So sad. I also stick to simple dinners - a grilled meat, grilled veggies and a starch. Maybe a big salad too. It doesn’t have to be hard - keep it simple.
