This is one of those dinners I make when I want something easy that I know everyone will eat. 💆🏻‍♀️ These Loaded Potato Taco Bowls are on our meal plan at least once a fortnight because they’re simple, budget-friendly and they taste incredible with a minimal amount of effort. I roast potatoes, pile them up with seasoned beef, and then let everyone add their own toppings. I almost always double the beef mixture… half for dinner tonight and half for the freezer for a night when I really need it! My word for 2025 was balance — and I’d be lying if I said I found it 😂 Maybe some days more than others. This year marks 5 years of Simple Home Edit, and it’s impossible to separate it from who I am now. It’s a part of me in the best possible way. It pushes (sometimes shoves 😅) me out of my comfort zone and gives me something I truly love doing. It’s bigger than recipes. It’s about food that fits into busy days, tired evenings, and full houses. As 2025 comes to a close (because let’s face it, I’ll be asleep as soon as the family fireworks finish 😂), I want to say thank you… and I really mean it. Thank you. There truly isn’t a day that goes by that I don’t feel grateful for the trust, the support, and the kindness you share with me. Super easy 2 ingredient flat bread tutorial 🥖👀 Recipe 👇🏼👇🏼👇🏼👇🏼👇🏼 2 Ingredient Flatbread Recipe By Simple Home Edit 1 cup full fat Greek yoghurt 1 and 1/3 cups self-raising flour, plus extra for dusting Oil for greasing the pan Combine the yoghurt and self-raising flour in a medium-sized bowl using a spoon. The mixture will resemble large flakes. Tip the mixture onto a clean, floured kitchen bench and knead for 5 minutes until it has combined, using more flour as needed on your hands as the dough will be very sticky. Form a dough ball and cut it into 8 pieces. Using more flour if needed, roll each piece into an oval or round so that it’s roughly 5 mm or 1/4″ thick. Cook in a greased, non-stick pan on medium-low heat for 1-2 minutes on each side until golden.
