Mini Cookie Pie 🍪 (Small Batch Recipe)⬇️❤️💕 Ingredients Butter – 27 g Caster sugar – 9 g Light brown sugar – 23 g yogurt (curd) – 8 g Milk – 2 g All-purpose flour – 50 g Cornflour – 1 g Baking soda – a pinch Baking powder – a pinch Chocolate chips – 15–20 g Chocolate for centre - 30gm Method Cream butter, caster sugar and brown sugar until combined. Add yogurt and milk . Mix well. Add flour, cornflour, baking soda, baking powder . Mix to form a soft cookie dough. Fold in chocolate chips. Divide the dough into 2 portions (~60 g each) and press into greased ramekins with chocolate pc in centre Bake at 180°C for 10–14 minutes until the top is golden and the centre stays slightly gooey. You could also replace blueberries with any other berries or fruit of your choice! Apples, pineapple, raspberries, grapes, pears- they’ll all work so well ❤️ Ingredients- 1/2 cup frozen/fresh blueberries 2 tablespoons caster sugar 1 tablespoon cornflour + 3 tablespoons water 1 tablespoon lemon juice Procedure- 1. Cook the blueberries and sugar on medium heat until the sugar melts completely and the blueberries release their juices. 2. Once the fruit becomes soft and jammy, add the cornflour slurry and cook until thickened. 3. Take it off the heat and finish with a squeeze of lemon juice. 4. Thick, fudgy and beautiful crinkly top!! 🍫 🤎 75g dark chocolate ¼ cup (57g) butter ¼ cup (50) sugar (use 35g if you prefer less sweet) ¼ cup (50g) brown sugar 1 large egg (room temperature A small pinch of salt (skip if butter is salted) ½ tsp vanilla extract ½ tsp instant coffee ¼ cup (37–38g) all-purpose flour 2 tbsp (17–18g) cocoa powder Some chocolate chunks Directions: 1. In a bowl, melt the chocolate and butter together, then mix until smooth. 2. In another bowl, add the egg, white sugar, and brown sugar. Beat with a hand whisk or an electric mixer for a good few minutes until the sugar dissolves and the mixture becomes light and pale (this step is important for getting a shiny, crackly top on brownies). 3. Gently fold in the melted chocolate mixture. Add instant coffee and mix. Add all-purpose flour and cocoa powder, then fold in carefully. Fold in some chocolate chunks. Do not overmix. 4. Bake in a preheated oven at 175°C for 15-18 minutes with both the upper and lower rods on (fan off). The brownies are done when a skewer inserted in the center comes out with a few moist crumbs. 5. Do not overbake. They may seem slightly underdone, but they will set into perfectly fudgy brownies once cooled. 6. Make the Cake * Preheat oven to 350°F / 175°C. Butter a 6-inch pan and line with crumpled parchment. * Combine cocoa powder and espresso in a bowl. * Heat milk until hot and foamy; pour over cocoa mixture and stir smooth. * Whisk in oil, sugar, egg, and sour cream. * Add flour, baking powder, and salt; fold just until no flour streaks remain. * Pour into pan and bake 30–35 minutes, or until a thermometer reads 205°F / 96°C in the center. * Cool in the pan 15 minutes, then transfer to a rack. 2. Make the Frosting * Beat mascarpone, salt, sugar, cocoa, and heavy cream together until soft peaks form. 3. Assemble * Once the cake is fully cool, frost generously. 🍫 CHOCO LAVA CAKE 🍫 A chocolava cake has to be the quickest + most delicious thing you can bake, with only FIVE basic ingredients, under 15 minutes! 😯 It’s quick, it’s small batch, it’s super easy and insanely chocolate-y, you have to HAVE TO make it now! ♥️ My fondest memories of chocolava cake include the one from dominos, it was so addictive, do you remember? 😍 Try using the best chocolate available to you, and have it when it’s warm, it’s the BEST!! Also I always make it with eggs, but you could try replacing them with yogurt maybe? Ingredients- 20 grams dark chocolate 25 grams butter 1 egg 15 grams caster sugar 10 grams flour Procedure- 1. Melt together the butter and chocolate and allow to cool. 2. Whisk together the egg and sugar. 3. Pour in the chocolate butter mixture and whisk to combine. 4. Stir in the flour. 5. Transfer to a greased ramekin and place a big chunk of chocolate in the centre. 6. Bake at 180C for 8 minutes. 7.
