Rule of thumb, roll the dough to the width of your mold. 👍 They’ll rest overnight for the design to set and then it’s time to bake! These cookies aren’t hard to make- rather it’s quite meditative ☺️😌 perfect for a peaceful moment with the birds chirping outside. 【クッキーモールドonlineshop】 モールドの販売で一番お問い合わせが多い、レシピとモールドの使い方を載せてみます。 もっとも私は素人なので、他にも良いレシピがあると思いますし、本場のスペキュロスなどのレシピはまた別です。今回は、誰でもうまくいきやすい、サブレのレシピと型押しの動画を作ってみたので、ご参考にどうぞ。 私はこの生地にココアやスパイスを加えてアレンジをしたりしています。(ココアなどを加える場合はその分小麦粉を減らしてみてください) (鉄板2枚分) 無塩バター120g 粉砂糖80g 塩1g 卵黄2個 アーモンドプードル40g 薄力粉240g 打ち粉(強力粉)適量 1.バターは室温に戻し、柔らかくしておく 2.ハンドミキサーでバターが白っぽくもったりするまで撹拌する 3.粉砂糖を2に入れて、さらにハンドミキサーでふわっとするまで混ぜる 4.卵黄を一つづつ加えて、そのたびにハンドミキサーで混ぜ乳化させる(完全に混ぜる)塩を加える。 5.ゴムベラにもちかえ、アーモンドプードルを加えて、さっくり混ぜる 6.ふるった小麦粉を一度に入れて、さっくり混ぜる 7.一かたまりになったら、まだ粉っぽさが残ってる状態で、ラップに取り、ラップの上で生地を何度か折り畳み、押しながら、粉を馴染ませる。(あくまでこねないように) 8.粉っぽさがなくなったら、生地をかたまりにしてラップで包み、冷蔵庫で最低一時間冷やす 9.冷やした生地を取り出し、硬さを調整しながら伸ばし、型押しをする 10.型抜きをしたら、冷やし少し乾燥させる 11.オーブンシートや、シルパンを敷いた鉄板に並べ、170度に余熱したオーブンで15ー20分焼く コツ! *生地は柔らかくなりすぎるとベタついてしまうので、私は半分にて冷蔵庫で冷やしながら作業しています。2番生地、3番生地を使う時も、ラップの上でまとめて(こねないように)、その都度冷蔵庫で冷やします。 Onlineshopは1/3(金)21:00にオープンです #spicecookies #homemmadesweets #speculoos #speculoosmold #piernik #bakedsweets #スパイス #スパイスクッキー #手作りお菓子 #スペキュロス #スペキュロス型 #焼き菓子 #クッキー型 #ピエルニク木型 #スペキュロス型 #スペキュロス #speculoos #speculoosmold #springerle #springerlemold #piernik #クッキー #クッキー作り #ジンジャークッキー #木型 #お菓子作り #お菓子型 #アンティーク #アンティーク型 #焼き菓子 #手作りお菓子 #手作りクッキー #クリスマス

Technically a Christmas cookie, Springerle are crisp-on-the-outside, chewy-on-the-inside German biscuits that are delicious all year round. A bit like macarons, they're allowed to dry out a bit so that, when they bake, they rise upwards with a crisp shell on the top and a puffy 'foot' at the bottom. I used floral mooncake moulds to stamp the patterns, and painted them with food colouring to make Springerle for spring. They make adorable Easter cookies, too. They're also traditionally flavoured with aniseed, but to be honest, I don't like aniseed – so I used cardamom and vanilla instead. Dieses Rezept isch wie bei Oma: a bissle Geduld, a bissle Liebe – und fertig isch der Keks, der Kindheitserinnerunge zurückholt. 🍪 Zutaten (für echte Springerle mit „Füßle“) • 4 Eier • 500 g Puderzucker • 1 Pck. Vanillezucker • 1 Prise Salz + 1/4 TL Hirschhornsalz • 500 g Mehl • Anis ganz (fürs Blech) 1️⃣ Eier + Zucker + Vanille + Hirschhornsalz 10–15 Minuten hell-cremig schlagen. 👉 „So weiß wie a frisch g’fallener Schnee vorm Haus!“ 2️⃣ Mehl dazu Mit Gefühl einarbeiten, bis ein fester, glatter Teig entsteht. 👉 „Net alles uff’m Boden – des isch teuer!“ 3️⃣ Teig ruhen lassen 1–2 Stunden abgedeckt rasten lassen. 👉 Jetzt isch Zeit für a Kaffee oder a gscheids Käsbrot. 4️⃣ Ausrollen & Prägen Teig 8–10 mm dick ausrollen, Springerle-Model fest eindrücken, Motive ausstechen. 5️⃣ 12-24 Stunden trocknen lassen Wichtig für die berühmten Füßle! 👉 „Geduld, Leut – des lohnt sich!“ 6️⃣ Backen Springerle auf Anis setzen. 140–150°C, 20–30 Minuten, hell lassen – net braun werden! Fertig. Traditionalle, stolz-schwäbisch & zum Wegschnappa guat. 💡 Tipps für perfekte Springerle (Füßle-Garantie!) • Lange schlagen! Je fluffiger die Eier-Zucker-Masse, desto schöner springen se. • Genug trocknen lassen! Mindestens 12-24 h – sonst bleiben se platt wie a Fladen. • Teigdicke zählt! 8–10 mm → bestes Relief & stabile Füßle. • Backtemperatur niedrig halten Zu heiß = Springerle ohne Füßle, dafür in Vollbraun. • Auf Anis backen, net drunter mischen! Der Duft wandert hoch – gibt den typischen Geschmack.
