SECHILI GARLIC CHICKEN SUMMER ROLLS ✨
Ingredients
Chicken
* 1 chicken breast
* 1/2 tsp chili oil
* 1 tsp soy sauce
* 1 garlic clove, grated
* 1/2 tsp ginger
* 1 tsp honey
Rolls
* Rice paper wraps
* Rice noodles
* Shredded carrots
* Shredded cucumbers
* Cilantro
* Lettuce
Peanut Sauce
* 1/2 cup peanut butter
* 2 tbsp sriracha
* 1 tsp rice vinegar
* 2 tsp sesame oil
* 4 tbsp soy sauce
* 3 tbsp lime juice
* 1 garlic clove
* 1/4 tsp ginger
* 2–3 tbsp water (add slowly)
Directions:
1. Whisk together chicken marinade + coat chicken. Let sit at least 20 minutes, then air fry at 375°F for 14–16 min (flip halfway).
2. Cook rice noodles, drain, rinse with cold water, and set aside.
3. Prep all veggies + herbs (thinly slice for easy rolling).
4. Dip rice paper in warm water (10–15 sec). Add noodles, veggies, herbs, and sliced chicken. Fold sides and roll tightly.
5. Whisk all peanut sauce ingredients until smooth, adding water until creamy. Serve and enjoy.
