EKPırasa Dolması - ⚠️ Dikkat Sarma Değil ⚠️
İç harcına özellikle soğan eklemedim çünkü pırasa zaten soğan ailesine mensup 🧅
Pırasaları iki parmak kalınlığında kesiyoruz ve ortasında ittirerek koni şekline getiriyoruz.
NOT: Pırasa uçlarını atmayınız. İnce ince doğrayıp tepsinin tabanına döşeyiniz.
250 gram kadar orta yağlı dana kıyma, 200 gram kırık pirinç, 1 kaşık domates salçası, biraz maydanoz, tuz ve karabiber ile hazırladığımız iç harcını pırasalara doldurup tepsiye diziyoruz.
Tereyağında kavurduğumuz salçayı biraz kaynatıp tepsiye döküyoruz. Salça sosu kavurarak yapmanızı tavsiye ederim.
Üzerini yağlı kâğıt ile örttüğümüz tepsiyi 180 derecede fırınlıyoruz. Kâğıdın üzeri hafif kararmaya başlayınca hazır demektir 😍

Stuffed Leeks - ⚠️ Warning: Not a Wrap ⚠️
I deliberately didn’t add onions to the filling because leeks already belong to the onion family 🧅
We cut the leeks into two-finger-thick slices and push them in the middle to form a cone shape.
NOTE: Do not discard the leek ends. Chop them finely and arrange them on the bottom of the baking tray.
We fill the leeks with the filling prepared with 250 grams of medium-fat ground beef, 200 grams of broken rice, 1 tablespoon of tomato paste, some parsley, salt, and pepper, and arrange them in the baking tray.
We sauté the tomato paste in butter, simmer it briefly, and pour it over the leeks. I recommend sautéing the tomato paste before making the sauce.
We cover the baking tray with parchment paper and bake it at 180 degrees Celsius. It’s ready when the top of the paper starts to lightly brown 😍
