The most delicious summer cake, summer berries crumb cake recipe!🍓🫐🥰 Ingredients: 3 medium eggs Vanilla 160g softened butter 160g caster sugar 160g plain flour 5g baking powder 30ml milk About 300g Berries (I used frozen berries but you can use fresh berries too) Crumble: 50g cold cubed butter 100g flour 30g caster sugar -to make the crumble, Rub the butter & sugar into the flour to make a light breadcrumb texture. Method: -start by creaming the butter and sugar for about 5 mins. Then start adding the eggs one by one mixing between each addition. -sift in the flour and baking powder, mix then add the milk and mix until you end up with a smooth soft batter. -add the batter to a lined baking tin, spread the batter to even out. Add the berries on top. -sprinkle the crumble over the berries. -bake in a preheated (160c fan) oven for about 30 mins #berries🍓 #summercake #crumbcake #crumblecake #recipeshare #recipereels

The ultimate summer cake. This Coconut Cake is simple, stunning, and ridiculously good with a creamy coconut frosting and pineapple filling that takes it over the top. (Full recipe in the caption too ⬇️) ✔️RECIPE✔️ 2 cups all-purpose flour (250g) 1 Tbsp baking powder 1 tsp salt ½ cup unsalted butter, room temp (113g) 2 cups sugar (400g) 1¼ cups canned unsweetened coconut milk (from a 13.5oz can) 1½ tsp coconut extract 5 large egg whites, beaten to stiff peaks Pineapple Filling: 1 (20 oz) can crushed pineapple ⅔ cup sugar (134g) 2 Tbsp cornstarch Coconut Cream Cheese Frosting: ½ cup butter, room temp (113g) 8 oz cream cheese, room temp 4–5 cups powdered sugar (480–600g) 1–2 Tbsp remaining coconut milk or regular milk 1 cup sweetened shredded coconut (85g) 🧁 Instructions: Prep Pans: Preheat oven to 350°F (180°C). Line two 8-inch cake pans with parchment and spray. Mix Cake Batter: 👉🏼Whisk flour, baking powder, and salt. 👉🏼In another bowl, cream butter + sugar until fluffy. Mix in coconut milk + extract. 👉🏼Add dry ingredients and mix for 2 minutes. 👉🏼Fold in stiff egg whites. Bake: 👉🏼Divide batter between pans. Bake 25–35 min, until a toothpick comes out clean. Cool 5 min, then invert onto a rack. Once cool, slice each cake horizontally to make 4 thin layers. Make Pineapple Filling: 👉🏼Add pineapple, sugar, and cornstarch to a saucepan. 👉🏼Cook over medium heat, stirring, 5–8 min until thick and glossy. 👉🏼Cool completely (store up to 1 week in fridge). Make Frosting: 👉🏼Beat butter + cream cheese until smooth. 👉🏼Add powdered sugar + milk and beat until fluffy. 👉🏼Stir in shredded coconut (reserve some for topping if you like). Assemble Cake: 👉🏼Layer cake + pineapple + frosting. Repeat. 👉🏼Frost outside and top with coconut. W dużej misce mieszamy suche składniki. W drugiej misce mieszamy składniki mokre i te mokre wlewamy do suchych. Całość mieszamy. Powstanie gęste, ciągliwe ciasto. Wykładamy je na blaszkę wyłożoną papierem. Na ciasto wykładamy pokrojone owoce i zagnieconą kruszonkę (ma konsystencję mokrego piasku). It needs to set properly before being added to the cream cheese filling JELLY FOR THE FILLING: 1/2 pack of kiwi jelly 1/2 pack of raspberry jelly 1/2 pack of lemon jelly 1/2 pack of blueberry jelly (Or 2 whole packs of two of the colors if you don’t want to be left with 4 half packs 😂🙈) Prepare the jelly as instructed on the package. We let the jelly set in 4 different loaf pans. CREAM CHEESE FILLING : 6 sheets of gelatin 300 g sour cream, not low-fat 200 g cream cheese 300 ml heavy cream 100 g sugar 100 ml pineapple juice (or orange juice) Juice of 1/2 lemon (to taste) CRUST: 200 g Digestive biscuits 75 g butter 1 tbsp brown sugar Start by soaking the gelatin sheets in plenty of cold water. Put the pineapple juice and sugar in a saucepan and bring to a boil. Remove the pan from the heat and add the gelatin sheets. Stir well until the gelatin is completely melted. Cool to room temperature. It is important not to add in the gelatin mixture while it is hot! Next, make the crust. Line the bottom of a springform pan (22-24cm) with baking paper (we also used cake plastic along the edge). Crush the biscuits until they resemble fine sand. Melt the butter, add the brown sugar, and mix it together with the crushed biscuits. Press the mixture firmly into the bottom. Place in the fridge. Chop the jelly into pieces, some a bit larger and some smaller (so that it looks like terrazzo 🥰). Place the jelly back in the fridge. Whip together the sour cream, heavy cream, and cream cheese until fluffy. The mixture will be runny before it thickens. Add the pineapple juice mixture cooled down to room temperature and whisk until combined. Add lemon juice to taste. Gently fold the jelly pieces into the cheese mixture and pour the mixture over your biscuit crust. Set in the fridge for at least 4 hours. Topping: whipped cream and edible flowers

🫐🍋Blueberry Lemon Cake @stdalfourusa 🍋🫐 It’s blueberry season, and there is no better way to celebrate than with this summery, sweet & lightly tart blueberry lemon cake🤤 It has a bright lemon sponge and layers of gooey blueberry spread thanks to @stdalfourusa ‘s Blueberry Fruit spread, which is made with gobs of whole blueberries and sweetened with vineyard-ripened grape juice!🩵 ✨Dry Ingredients 2 cups all-purpose flour (240g) 1 cup granulated white sugar (200g) 2 tsp baking powder ½ tsp baking soda ½ tsp salt ✨Wet Ingredients 1 ½ cup dairy-free milk ½ cup oil 2 tsp vanilla extract 2 tbsp lemon juice 1 tbsp lemon zest ✨Inside @stdalfourusa Blueberry Fruit Spread ✨ Lemon Buttercream 3 cups powdered sugar (390 g) 3/4 cup vegan butter (170g) zest of 1 lemon (about 2g) 1 tsp vanilla or vanilla bean paste 1/4 tsp salt ✨Directions In a bowl, whisk together the wet and dry ingredients. Transfer to a gently greased and parchment-lined springform cake pan. I used a 6 inch pan for a taller cake. Bake the cake at 350°F/ 175 °C for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Wait for the cake to FULLY cool, then use a cake level, or a serrated knife to level the top of the cake. Then use the knife or cake level to split the cake into two or three layers. I split mine into three layers. In a stand mixer, beat the butter for several minutes, then add the lemon zest, vanilla, salt, and then slowly add in the powdered sugar. Add a small dollop of buttercream to the bottom of the cake stand where you will be layering the cake. Then add the first cake layer on top. The buttercream will help the cake stay in place. Transfer the buttercream to a piping bag and pipe a thick layer around the perimeter of the first cake layer. Add a thin layer of buttercream in the middle. Add a generous layer of @stdalfourusa Blueberry Fruit spread in the middle of the cake and top with the second cake layer. Repeat the process above until you reach the top layer. Cover the top and sides of the cake with the rest of the buttercream, then add fresh blueberries, lemon slices, and mint leaves on top. Slice & enjoy!🥰 #cake #baking #recipe #snack
