Because they were developed in hierarchical service cultures, not modern dining where respect and warmth go hand-in-hand. 1️⃣ Only thanking staff at the end of the meal In traditional service, this was restraint. In modern restaurants, appreciation throughout the experience is normal and appropriate. 2️⃣ Avoiding small talk with staff Distance once signaled class and was disguised as “letting them do their job.” Today, courtesy includes connection. That said, holding up servers for extended chit chat while they’re clearly busy is not considerate. 3️⃣ No elbows on the table, ever There is a long history here, which could be a whole post! In short, in the most formal modern service environments, keeping elbows off the table is still the norm. But in casual and midscale restaurants, resting your elbows before the meal is served or after plates are cleared is normal. Matching your companion’s body language, leaning in, and talking with your hands are part of engaged communication. 4️⃣ Not using servers first names Formal address once reinforced hierarchy. In contemporary hospitality, if names are offered, they can be used naturally. 5️⃣ Minimal movement during service Old etiquette prized stillness as refinement. Today, if you need to get up, you can. Ideally between courses, but whenever necessary. Gesturing, moving naturally, and engaging expressively are appropriate as long as your volume and tone match the space.
