It has a traditional and savory pot pie filling, along with Cheddar Bay biscuits for the topping coated with garlic butter. (link in bio) *Note*: Upon removing from the oven when baking, be sure to check if the biscuits are fully baked. If the top has fully browned but dough underneath is undercooked, I recommend reducing the heat to 350F and continue baking in 5 minute intervals to ensure doneness. Ingredients: Chicken Breast •4 tbsp Olive Oil, divided 2 tbsp for marinate 2 tbsp for cooking •1 pound Boneless Skinless Chicken Breast, about 2-3 chicken breast •1 tsp Kosher Salt, or to taste •1 tsp Black Pepper, or to taste •1 tsp Garlic Powder •1 tsp Italian Seasoning •1 tsp Smoked Paprika Pot Pie Filling •4 tbsp Unsalted Butter •½ medium Yellow Onion, diced •1 large Carrot, diced •2 Celery Ribs, diced •½ tsp Kosher Salt, or to taste •½ tsp Black Pepper, or to taste •1 tsp Garlic Powder •1 tsp Dried Thyme, or 1 tbsp Fresh Thyme Chopped •¼ tsp Smoked Paprika •3 cloves Garlic, minced •60g All-Purpose Flour •2 ½ cups Chicken Stock •1 cup Heavy Cream •1 cup Frozen Peas •¼ tsp Kosher Salt, to taste after incorporating chicken & peas •¼ tsp Black Pepper, to taste after incorporating chicken & peas Cheddar Bay Biscuits •300g Unbleached All-Purpose Flour •2 tsp Baking Powder •2 tsp Garlic Powder •2 tsp Onion Powder •1 tsp Fine Sea Salt •1 tbsp Granulated White Sugar •½ tsp Baking Soda •4 oz Freshly Shredded Cheddar Cheese •1 cup (240ml) Whole Buttermilk •8 tbsp (1 stick/113g) Unsalted Butter, melted & cooled to room temperature Garlic Butter Topping •4 tbsp Unsalted Butter, melted •1 tsp Dried Parsley, or fresh parsley •½ tsp Garlic Powder •Pinch of salt, optional •Grated Parmiagiano Reggiano, to taste; optional

CREAMY CAJUN CHICKEN AND CHORIZO POT PIE Nothing says comfort food quite like a pie… and it’s National Pie Week so it felt rude not to 🥧 This Creamy Cajun Chicken & Chorizo Pot Pie is packed with chicken, smoky chorizo, peppers and sweetcorn in a creamy Cajun sauce with Boursin, all finished with golden puff pastry. Big flavour, minimal effort as all you need to do is dump the ingredients in and the ultimate cosy dinner Serves 4 Cals 599 | Pro 35 | Carb 31 | Fat 37 Ingredients ~ 1 onion 1 red pepper 100g frozen sweetcorn 400g chicken breast 100g chorizo 2 tsp Cajun seasoning 1 tsp each of garlic/paprika 1 Boursin 3 tbsp tomato purée 200ml hot chicken stock 200g puff pastry Method ~ *Layer up onion, pepper, sweetcorn, chicken and chorizo in an oven safe dish *Sprinkle over the seasonings *In the middle, add tomato purée, with the Boursin on top *Pour over chicken stock, cover and cook on 200C for 35 mins *Then remove from oven and give it to a good stir *Cut pastry into squares (I also cut gentle slits across mine to help rise) and thought these on top, brush with milk or beaten egg and bake for another 25 mins Hope you enjoy! INGREDIENTS Chicken: • 1 lb chicken (2 breasts, 2 thighs) • Seasoning: 2 tsp garlic powder, 2 tsp onion powder, 1 heaping tsp each: oregano, smoked paprika, Chica Licka Bam Bam rub. • 1/2 tsp bouillon (opt), celery salt & pepper (to taste). • 1 tbsp oil + 1 tbsp ghee (for cooking). Filling: • 2 tbsp ghee, 1 small onion, 1 shallot, 2 carrots, 2 celery stalks (all diced), 6 cloves garlic (minced). • 1/4 cup flour, 1 cup chicken broth, 1 cup heavy cream, 1 cup half & half. • 1/3 cup peas. • Seasoning: 1 heaping tsp each: garlic powder, onion powder, smoked paprika. 1/2 tsp thyme, 1/2 tsp chili flakes (opt), salt & pepper. Biscuit Topping: • 270g (2 cups) flour, 1 tbsp baking powder, 1 tsp sugar. • 1 tsp garlic powder, 1/2 tsp Old Bay, 1/2 tsp salt. • 113g (1/2 cup) cold butter (grated). • 8 oz (1 cup) cheddar (shredded), 245ml (1 cup) cold buttermilk. Garlic Butter Finish: • 3 tbsp melted butter, 1/2 tsp garlic powder, 1 tbsp parsley. INSTRUCTIONS 1️⃣ Season chicken with all "Chicken" spices. Sear in oil/ghee over med-high heat until golden and cooked (4–5 mins per side). Rest, then shred. 2️⃣ In same pan, melt ghee. Sauté onion, shallot, carrots, & celery until soft (5–7 mins). Add garlic (30s). 3️⃣ Stir in flour (1 min). Slowly whisk in broth, cream, & half/half. Simmer until thick. 4️⃣ Fold in chicken, peas, and filling seasonings. Taste, adjust, and remove from heat. 5️⃣ Preheat oven to 400°F (205°C). 6️⃣ Whisk dry biscuit ingredients. Use a fork to work in grated butter until crumbly. Fold in cheese, then buttermilk; mix until just combined. 7️⃣ Pour filling into dish (over optional bottom crust). Spoon dough over top. Creamy Chicken Pot Pie with Cheddar Bay Biscuit Topping 🥧🧀 Season 1 lb chicken (I used rotisserie) with garlic powder, onion powder, oregano, smoked paprika, chicken rub, celery salt & pepper. Cook in a pan with 1 tbsp oil + 1 tbsp butter until done or if using rotisserie, just season chicken. In the cast iron pan melt 2 tbsp butter. Sauté 1 diced onion, 2 diced carrots, 2 celery stalks, and 6 cloves minced garlic. Stir in ¼ cup flour, then slowly whisk in 1 cup chicken broth, 1 cup heavy cream, and 1 cup half-and-half. Add peas plus a little garlic powder, onion powder, paprika, thyme, salt & pepper. Simmer until thick, then stir in the chicken. Set aside. Biscuit topping: Mix 2 cups flour, 1 tbsp baking powder, 1 tsp sugar, 1 tsp garlic powder, ½ tsp Old Bay, and ½ tsp salt. Add ½ cup grated cold butter, 1 cup shredded cheddar, and 1 cup cold buttermilk or reg milk. Drop biscuit dough on top, and bake at 400°F for 25-30 minutes until golden. Brush with garlic butter (3 tbsp melted butter + ½ tsp garlic powder + 1 tbsp parsley). Let sit 5 minutes and enjoy! 😋#homemade #yum #recipe #potpie

I made them completely from scratch, even the the hot water dough for the crust from scratch too. I didn’t use the metal cylinders or tie paper around them so they had an unconventional shape but I smashed it out the park with the taste. Amazing! 🤩 We threw a little HP sauce on it and voila! #scottishmeatpies #hpsauce #hotwaterdough #scottish #meatpies
