What would you fill these tartlet shells with? The shortcrust pastry (« pâte sablée ») is super easy to make in the food processor - though you can absolutely make it by hands too ❤️ For 15 tartlet shells: - 250 gr Plain/AP Flour - 50 gr Icing or Powdered Sugar - 1 pinch Salt - 120 gr Unsalted Butter, very cold - 1 large Egg 1. Place the Flour, Icing Sugar and Salt in the bowl of your Food Processor and pulse to mix. Add the cold Butter cut into small cubes, then mix to get very small crumbs. 2. Add the Egg and pulse until a dough starts to come together. 3. Roll between two sheets of baking paper, about 4mm thick. Put in the fridge for at least 1 hour. 4. Cut out small circle of pastries and gently press them into the tartlets molds. Cut out any excess and use a plastic straw (or similar) to define the flutted edges. Dock the pastry then chill for at least 1 hour - preferably overnight. 5. Preheat your oven on 160’c/325’f. Line the pastries with baking paper and fill with weights, dried beans or rice. 6. Bake for 15min, then remove the weights and paper and bake for another 10min or until golden and fully dry. Tartlet Recipe 🫶🍓 For the Dough: 125 g butter or margarine (room temperature) ½ cup powdered sugar A pinch of salt 1 egg Vanilla 2 cups flour (add gradually) For the Pastry Cream: 2.5 cups milk ½ cup granulated sugar 2 tbsp starch 2 tbsp flour 1 egg ½ pack heavy cream or whipped cream Optional: 80 g white chocolate Instructions: Prepare the Dough: In a bowl, combine flour, powdered sugar, butter, salt, vanilla, and egg. Knead until smooth. Chill the dough in the fridge for at least 30 minutes. Press the dough into tartlet molds and bake at 180°C (356°F) until lightly golden. Make the Pastry Cream: In a saucepan, mix milk, sugar, starch, flour, and egg. Stir constantly over medium heat until it thickens. Optional: Add white chocolate for extra flavor. Once thickened, remove from heat, cover with plastic wrap, and let it cool. After cooling, fold in heavy cream or whipped cream and beat until smooth. Assemble the Tartlets: Fill the baked tartlet shells with pastry cream. Working with pastry is so beautiful when you have the patience to follow the process — step by step, without trying to skip ahead. Tartlet shells take time, precision, and care… and honestly, that’s part of what I love most about them. From start to finish: • Roll it thin between parchment (or guitar sheets) • Rest the dough for 12 hours • Line each tartlet ring by hand • Freeze to hold the shape • Bake until lightly golden • Cool completely • Brush each shell with egg wash • Bake again for that perfect crisp finish It’s a slow process — but it’s what creates that delicate, crisp shell that holds everything together. Extiende una hoja de pasta filo y pincela con mantequilla (derretida y a temperatura ambiente). 2. Espolvorea por toda la superficie con azúcar glass. 3. Coloca encima otra hoja de pasta filo y de nuevo pincela con mantequilla y espolvorea con azúcar glass. 4. Coloca la tercera y última hoja de pasta filo y esta vez sólo unta con mantequilla. 5. Con la ayuda de un cortador redondo (para mi molde de tartaleta ha es de 14 cm Ø), recorta el contorno del mismo. 6. Coloca el disco de pasta filo sobre el molde (por la parte exterior y con la hoja untada de mantequilla tocando el molde). Alisa y dale la forma ondulada del molde. 7. Coloca encima de la pasta filo un nuevo molde y colócalo en la bandeja de horno. 8. Cuando tengas todos los moldes listos, bandeja al horno (precalentado a 170ºC) durante 8-10 minutos. 9. Retira los moldes del horno, deja templar un par de minutos y desmolda primero el molde de la parte superior y luego con cuidado la tartaleta. 10. Deja enfriar a temperatura ambiente. 11. Estas tartaletas se han de preparar como mucho 24 h de ser utilizadas. #lareposteriademiguel #tarts #delicious #reposteria

Tart shell | tart crust. 📌 recipe in english . <Sablage Method> Start with cold butter and coat it with dry ingredients followed by eggs etc. 100 g Unsalted Butter ( cold temp ). Salt a pinch 72 g Powdered Sugar 20 g Almond Powder 30 g Corn Starch 36 g Eggs (room temp) 170g Cake Flour 1. Measure and cut butter into chunks and place it into the freezer for a few minutes. 2. Sift together dry ingredients; flour, Corn Starch, Powdered Sugar, almond, salt. 3. Add very cold butter chunks into the dry ingredients, and rub the mixture between your hands until it becomes a sand-like consistency. 4. Add egg into the mixture and mix with your hands just until the dough comes together. 5. Knead the dough with the palm of your hand for a minute or two, just until the dough becomes smooth. Do not over-knead the dough . 6. If the dough is too warm and sticky, place it into the fridge for 10-15 minutes first. Otherwise, continue with rolling the dough out into 2mm thickness. 7. Rest in the fridge for 1~2hrs. - grease the tart ring with butter 8. Cut it out into stripsand place the strips into the perforated tart ring . Press each strip onto the ring so it sticks to it. 8. Cut it out into strip discs and place them into the rings . 9. Place the Perforated tart ring with the pastry dough in them into the fridge for 1 hour. 10. Pre-heat the oven to 160C / 320F 11. After 1 hour, trim the top of the pastry with a sharp knife. 12. Bake for 15 mins. #shelltarts #tartcrust #shortcrust #pastry
