Ok i made a batch of tepache 2 weeks ago, over 2 million people loved it, and I have not stopped making it since (4th batch). It's like it gets better each time! I much prefer it with brown sugar vs white, and making sure to drink it while its at peak fermentation really makes for great flavor and fizz. I also prefer to use the skins, core, and some of the actual pineapple as well. its sweet and tangy! Tepache This time I did a half gallon mason jar. Filled with the skins and core of one pineapple. I also included a few chunks of pineapple. For fermentation we rely on the microbes on the skins so do not soak them with anything super acidic or alkaline, if anything, scrub with a brush and water. Not much you can do about pesticide exposure here except dont use the skins or dont let Monsanto ruin your pineapple soda. For this increment of fermented soda I always do between 1/4- 1/2 cup sugar, today I went with 1/2 cup brown sugar, 1 cinnamon stick, a few cloves, and no regrets. Filled with filtered water, and sat on the counter to ferment. There are 2 ways you can go from here... I do 2 stages of fermentation. 1st stage I have a cloth or loose lid on top, I wait for lots of bubbles to form on top, I decide when I think ive reached peak fermentation and then I transfer to swing top bottles to trap carbonation. The other route is going right to your fermenting bottles, someone recently told me 2 liters are great for bubbly sodas because it doesnt have the same fermenting risks associated with glass. 1st stage of fermentation (until peak fermentation, very active) took around 48 hours, 2nd stage (just trapping carbonation) i did 6 hours. Remember fermentation times vary greatly. Are you going to try making a pineapple soda? Recipe 🍍 📌Save this for next time you have pineapple! If you are like me you hate wasting food scraps. I always felt bad throwing out my pineapple scraps until I learned about tepache. Once I tried it I was hooked and now I crave this drink every time I think of pineapple! It also has a secret added bonus! Since it’s fermented it is a probiotic drink 🤭 The recipe is so simple: Add your pineapple scraps to a gallon jar and cover with 2 quarts of water (or enough so it’s completely covered) Mix in 1 cup of brown sugar, 2 cloves and 1 cinnamon stick Place the lid on top but do not twist it! You just want it to prevent bugs and dust from getting in. If you twist it there is a chance it will explode! Let it sit for 2-3 days. Check the taste after 2 days to see if it is fermented. It should taste sweet, refreshing and slightly bubbly. It may take longer to ferment if your kitchen is cold. Here’s the recipe 👇 Tepache Recipe (Save This) Ingredients: • Peel + core of 1 pineapple (washed well) • 2–3 tbsp raw sugar, honey, or panela • 1 cinnamon stick (optional) • 1 clove or a slice of ginger (optional) • Filtered water Steps: Add the pineapple peel to a large jar or jug. Add sugar and spices. Fill with filtered water. Cover with a cloth or loose lid (it needs airflow). Ferment on the counter 24–48 hours. Strain, chill, enjoy — or bottle for 1 more day for extra fizz. Pineapple Tapache Test Ingredients • Skin of 1 well-washed pineapple • Core of 1 pineapple • 1 to 2 tablespoons sugar (I used monk fruit) • 1 cinnamon stick or a little ground cinnamon • 2 cloves • About 1 to 1.5 liters water Directions 1. Wash the pineapple very well. Since you are using the skin, scrub it properly. 2. Put the pineapple skin and core into a clean jar. 3. Add the cinnamon, cloves, sugar, and water. Stir a little so the sugar dissolves. 4. Keep everything submerged. This is important. The pineapple pieces should stay under the liquid as much as possible. 5. Cover the jar loosely. Do not seal it airtight. Use a loose lid or cloth so gas can escape. 6. Let it ferment at room temperature for about 24 to 72 hours. Check it daily. 7. Watch for the good signs: • small bubbles • slightly tangy smell • fresh fermented fruity smell 8. Throw it away if you notice bad signs: • fuzzy mold • rotten or disgusting smell • strange colors like green, black, or pink mold • pineapple floating high above the liquid and looking spoiled 9. Strain it once it tastes lightly fermented. 10. Store it in the fridge and drink it cold. How to drink it • Start with a small glass, around 100 to 150 ml • You can dilute it with water if you want • Best not to drink a lot at once the first time, especially if your stomach is sensitive Important note Because it is fermented, tapache can contain a small amount of alcohol. Usually it is low, especially if fermented only a short time, but it is not fully alcohol-free. A healthier fermented option if you want to avoid alcohol: • plain yogurt with live cultures • kefir • sauerkraut • kimchi • lacto-fermented vegetables in salted water

Making Tepache: A traditional Mexican probiotic drink Recipe: • Peels and core of 1 Pineapple • A knob of Ginger with skin on • 1-2 Cinnamon sticks (Other spices you can use - Cloves, Turmeric, Star Anise, etc) • 1/2 cup of Sugar • 1 liter of Water Procedure: • Boil some water (about 1-1.5 liters) and allow to cool down. Wash utensils properly. Wash and rinse pineapple (skins) and ginger with water and baking soda. • In a jar, place pineapple skins/core, spices and sugar. Add the cooled boiled water. Cover with a breathable cloth (towel or cheese cloth) and use a rubber band to hold it in place. Leave in a warm place for 3-4 days for fermentation to take place. The result of fermentation is the production of CO2 and lactic acid. • On day 1 of fermentation, you should see visible bubbles on the top and water looking cloudy. Stir once daily. • By day 3, you should have a tangy-tasting drink, and more foamy bubbles at the top. You can stop fermentation here or proceed to day 4. (Ended mine at day 3) • Next, filter the content of the jar and transfer drink into an air-tight bottle (preferably round bottle with slim neck). Tightly secure bottle cover and leave on the countertop at room temp for 1-2 days. This is for carbonation (fizziness) to occur. • Your tepache is then ready for consumption. Refrigerate and serve chill. Tips: • Ensure that your utensils are properly washed cause we only need the naturally occurring yeast and bacteria from the pineapple and ginger skins. Dirty utensils can cause molds to form. Clean water is essential too, hence the boiling. • The sugar isn’t necessarily to sweeten the drink.
