Threadfin fish cooked in sea salt   I used Threadfin fish in this recipe Baking the fish covered in sea salt will minimise the lose of juices during the cooking process. Resulting in a juicy and flavourful l fish.   Ingredients: Sea salt 1kg 2 Egg white Handful of fresh thyme Handful or kaffir lime leaves 2 stalks of lemon grass   Instructions:   *Don not scale the fish and leave the skin on   Finely chopped the herbs Mix the egg white with the sea salt Fill the cavity of the fish with mix herbs Cover the bottom of the baking pan with sea salt Put the herbs on top, then the fish Again, cover the fish with herbs then sea salt on top   Don not scale the fish   Baked at 220c for 20 mins   Nam Jim seafood sauce (Thai seafood dipping sauce)   Ingredients: 5 gloves Garlic 6 birds eye chili (adjust according to your taste) Handful of coriander roots Coriander leaves (mix at the end) 2 tbsp Palm sugar dissolved in hot water or castor sugar Juice of 2 limes 2 tbsp fish sauce   Instructions:   Finely chopped everything and mix together (best to let stand for 2 hrs to incorporate all the flavours)     Tips:   Try to cover whole fish with salt without any part of fish exposing This will help maintain the juiciness of the fish Mixing egg white with salt helps form a hard coating and prevents the juice of fish from leaking out. #hkfoodies #hkfoodstylist #filipinofoodmovement #foodphotography #foodlover #cookingvideos #thaiherbs #bake
