GItinga verde de pollo 🤤
ingredients:
for the chicken:
2 pounds of chicken
1/2 white onion
2 tablespoons of chicken bouillon
3 garlic cloves
black pepper
for the sauce:
8 tomatillos
1 jalapeño
1 chile serrano
2 garlic cloves
a quarter of a white onion
cilantro
1.5 tablespoons of chicken bouillon
1.5 cups of chicken broth
1 tsp peppercorn
tostadas
for the toppings i used
crema mexicana
lettuce
avocado
cotija cheese

TOSopes de Tinga… aka little boats of flavor because we’re sailing straight into deliciousness 🚤🌮😂
Crispy edges, juicy smoky chicken, and ALL the toppings… these sopes did NOT come to play 😮🔥 (and neither did our appetite 😅)
We used @elcomalproducts White Corn Sopes to keep it easy and authentic 🙌🏽 because honestly… we’re not out here making masa from scratch today lol
✨ Sopes de Tinga Recipe ✨
Ingredients:
• @elcomalproducts White Corn Sopes
• 4 lbs chicken breast 🐔
• 7 tomatoes 🍅
• 8 garlic cloves 🧄 (yes… we like it garlicky garlicky)
• 1¾ white onion 🧅
• 3 bay leaves 🌿
• 6 oz chipotle peppers in adobo 🌶️
• 1 tbsp chicken bouillon
• ½ tbsp black pepper
• 4 celery sticks
• 1 tbsp salt
• 1 tbsp cooking oil
Directions:
1. Boil chicken with ½ onion, celery, garlic, bay leaves, black pepper, and salt. Shred once cooled (aka arm workout 💪🏽😂).
2. Sauce: Blend tomatoes, garlic, onion, chipotle, bouillon, and water until smooth. (If it smells amazing… you’re doing it right 😏)
3. Sauté sliced onion in oil, add chicken + sauce, and let it simmer 5–10 mins until it’s juicy and saucyyyy 🔥
4. Lightly fry your sopes (golden = perfect 😍)
5. Build them up: refried beans, tinga, cabbage, crema, queso fresco, salsa… basically stack it like you mean it 😮💨
Careful… these disappear faster than “I’ll just have one” 😅

JOTinga para tistadas
200g de jitomate
129g de cebolla blanca
Dos dientes de ajo
3 chiles guajillo
1 chile chipotle adobado
50g de aceite de oliva o manteca de cerdo
100g de agua o caldo de pollo
200g de cebolla blanca fileteada
359g de pollo
En una sartén saltear los chiles guajillos limpios con ajo, cebolla y los jitomates por tiempos.
Cocer con un poco de líquido por 7 min.
Licuar junto con el chile chipotle y reservar.
En el mismo sartén saltear la cebolla fileteada por 3 minutos y agregar el pollo.
Verter la salsa y cocer todo en conjunto por 5 min más hasta que reduzca y tome la textura deseada.
