COOne Pan Cod “Risotto” 🐟🌿

Ingredients:
• 1lb cod filets
• ½ lb - 1lb of asparagus (up to your preference), chopped to bite-sized pieces
• Fresh basil, chopped
• 4 garlic cloves, minced
• 1 finely diced yellow onion (optional)
• 1½ c arborio rice
• 4c chicken stock
• 1 lemon, for juice and zest
• Salt & pepper
• 2 tbsp unsalted butter
• Freshly grated parmesan
Recipe:
- Using a paper towel, pat cod filets dry, then add salt & pepper.
- In a large pan, melt butter and sear cod, about 3-4 minutes per side on a high heat.
- Remove cod and set aside, reduce heat to medium, in the same pan, add asparagus and saute for 1-2 minutes. At this point, you can remove asparagus and set aside or leave it in the pan.
- Reduce heat to low and add in onion, cook for 3-4 minutes, then garlic & basil, cook for about 1 minute. -Now add in rice and let cook for an additional 2-3 minutes.
- Slowly add in chicken stock, cover with a lid and let simmer for 30 minutes.
- Once chicken stock is absorbed, remove lid. If you removed the asparagus, now add it back in. Add in salt, pepper, parm and lemon zest, then mix “risotto” together.
- Add cod filets back in, and add lemon juice. On a low heat, let cook for and additional 5-7 minutes, covered.
- Serve with more lemon zest and fresh basil.
