AGE: 13 months old MENU: ✨Breakfast: Barbecue tofu scramble, chia peach pudding, banana ✨ Morning snack: Strawberry kiwi smoothie (+ liquid multi-vitamin with iron, b12, etc to it) ✨ Lunch: Corn + potato chowder, cumin lime avocado slices ✨ Afternoon snack: Mango smoothie ✨ Dinner: Refried red + black beans, garlic broccoli, pasta ✨ Beverage: Water 3x a day + unsweetened pea milk ✨ Breastfeeding: 4x a day What’s great about his meals is they are great menu ideas even for adults, especially those who are new to plant-based eating or vegan lifestyles! Here’s the truth 👇🏻 I am no longer following a vegan lifestyle or strict plant-based diet. I know a lot of you know me as “That Vegan Mom” from YouTube and that’s just not me anymore. I’m not here to explain why or what caused the change, instead I want to state it loud and clear so no one follows me solely for how I chose to eat. I’m in my 30’s now. I don’t fall for fads, I don’t care what’s trending, and I don’t care about people’s opinions on my diet. The vegan lifestyle in all of its forms has taught me a lot about nutrition and health, but I wasn’t 100% healthy or meeting all my needs despite diligently tracking. Our food is so depleted and corrupted, a plant based diet filled with supplements and processed soy products was not as “healthy” as I thought at the time. I was suffering from random things without explanation, despite “eating healthy” and exercising. Here’s a few just to go down memory lane… I had plantar fasciitis, stiff joints in the morning, pain in my wrists and knees, migraines, acne on and off (hormonal imbalances), hair loss, and I was ALWAYS tired. Aside from experiencing these things, we faced huge life changes that made it incredibly difficult to maintain a vegan diet and hit all my nutritional targets, and what stressed me out the MOST was making sure ALL 3 of my kids were eating enough and getting the right nutrition also. It’s crazy that I convinced myself at the time that I had to follow this lifestyle for optimal health. Simply not true. I still believe a plant-based diet is healthy and beneficial in so many ways, but it’s not the optimal diet for everyone. And I started to see that over time. I’m not sure how many people follow me just for vegan content, but this page won’t revolve around that anymore. (Feel free to unfollow if that’s the case). Raw Vegan Brownie Bites - the ultimate quick mom snack 🍫🌱 Because sometimes the only break you get… is snack time 😅 These no-bake brownies are: • ready in minutes • naturally sweetened • perfect for busy moms • ideal for breastfeeding hunger • freezer friendly Soft, fudgy, chocolatey - and made with real ingredients. Ingredients: • 1 1/2 cups Medjool dates (pitted) • 1/2 cup walnuts, 1/2 cup pecans • 3 tbsp raw cacao powder • 2 tbsp melted coconut oil • 1 tsp vanilla extract • Pinch of sea salt Instructions: 1. If needed, soak dates in warm water for 10 minutes. 2. Blend walnuts and pecans until finely ground. 3. Add dates, cacao, coconut oil, vanilla and salt. Blend until a sticky dough forms. 4. Press into a lined pan. 5. Melt dark chocolate with 1 tsp coconut oil. 6. Spoon over the brownie and sprinkle with sea salt. 7. Freeze until set.
