There’s nothing more satisfying than baking your own soft whole wheat bread at home. Comment ‘ Bread’ if you like the recipe No maida, simple pantry ingredients, and perfectly fluffy and Soft . Thank you 🥖 Ingredients • 3 cups whole wheat flour • 2 tsp active dry yeast , ( if using instant yeast , no need to activate for 15 minutes , can directly add to the Flour . Just keep the total liquid 1.5 cup + 1 or 2 tbsp) • 1½ tbsp sugar • 1 tsp salt • 1¼ cups warm milk + 1,2 tbsp (add gradually) • 2 tbsp oil + 1 tbsp while kneading( any neutral oil) • 1/4 cup warm water (for activating yeast) Optional: pumpkin seeds / sesame / hemp seeds Method 1️⃣ In 1/4 cup warm water, mix sugar and yeast. Let it rest 10–15 minutes until frothy 2️⃣ In a big bowl, mix yeast mixture, 1 cup warm milk, and oil. 3️⃣ In another bowl, combine whole wheat flour and salt. 4️⃣ Gradually add liquid mixture to flour and mix well . Add extra 1/4 cup warm milk slowly . 5️⃣ Knead for 10–12 minutes by applying oil on hands until smooth and elastic. Add 1-2 tbsp milk if dough feels dry. 6️⃣ Cover and let rise in a warm place until doubled (about 60–90 minutes). 7️⃣ Punch down, remove air bubbles, roll tightly, and place in greased loaf pan. 8️⃣ Second proof 45–60 minutes only (do not overproof). 9️⃣ Bake at 180°C / 350°F for 35-0 minutes until top is golden. After baking brush the bread with some butter , cover and rest . 🔟 Cool completely for 3-4 hours before slicing. 💡 Important Tip ✔ Do not overproof – Whole wheat dough rises faster in a warm oven. Fluffy, Soft Whole Wheat Atta Bread recipe is going to be one of those recipes that I pass on to my kids! It’s that good! Unlike the crap you get in the market, this bread turns of soft & fluffy but also the crumb has so much body! Definitely try it! Whole Wheat Atta Bread Dry • 430g fine whole wheat atta • 35g vital wheat gluten • 1.5 tbsp milk powder (optional but recommended) • 1.5 tbsp sugar (18g) • 1½ tsp salt (8g) • Active Dry yeast (7g) Wet • 409 warm milk + 80ml • 2 tbsp oil (30g) 𝑴𝒆𝒕𝒉𝒐𝒅: ♥ Mix yeast in 120ml warm milk & sugar. Let it bloom for 10mins. ♥Mix all dry ingredients for dough. ♥Add in bloomed yeast. Mix gently. ♥Add milk in parts & start mixing. ♥Take the dough out on a falt surface & start kneading. Knead for 6-7mins to release gluten. ♥Add oil in parts & knead for 3-4 mins. ♥Shape into a ball & grease the bowl. Cover & let it rise for 1hr. ♥After 1st rise dough should double up 3/4th. Pull it out. Gently flatten it. Roll it as shown & transfer into greased baking tin. ♥Cover & proofs for 30-38min. ♥Brush milk on top & bake at 180C for 38mins. (If the top has browned after 25 mins cove the top with a foil tent. ♥Pull out of the oven, brush butter on top, remove from baking tin & place loaf on a wire rack to cool completely to room temp. ♥Cut slices with a serrated knife. Only 3–4 simple ingredients and you’ve got yourself a wholesome delicious 🤤whole wheat loaf 🍞. �Perfect for beginners, no fancy skills required just mix, rest, and bake. 🧑‍🍳 I really hope you guys give this one a try! ♥️✨ Here’s how you can make it: Combine the following ingredients just until you form a dough: 3½ cups whole wheat 🌾 flour (you can also use all-purpose or a gluten-free baking flour mix) 2 tsp + ¼ tsp active dry yeast ¼ tsp salt 🧂 1½ cups warm non-dairy milk o (water works perfectly too!) ¼ cup coconut 🥥 sugar, maple syrup, or any sweetener of your choice Cover the dough with a damp cloth and let it rest until doubled in size, mine took about 1 hour. About 25 minutes before the rise time is over, place your bread oven or Dutch oven into a preheated oven at 230°C. Once the dough has risen, shape it into a circle on a sheet of baking paper dusted with flour. Add pumpkin 🎃 seeds or oats on top, using a light oil spray or water to help them stick. Cut a semicircle into the top of the loaf to allow the bread 🍞 to expand while baking. After the 25 minutes are done, carefully remove the hot bread/dutch oven and place the dough inside using the overhanging baking paper. Bake with the lid on for 30 minutes. 100% whole wheat sourdough is my current chase. Pretty satisfied with this result, but I still chase it, I don’t know what I’m chasing exactly but at the same time I know, you know? 😄 When I see it, I’d know. This loaf is very soft and well fermented. It could’ve fermented even better. Hydration is 100%. The bran was sifted out and then added back in later. Also, this loaf was made with white starter, which means for some this isn’t a 100% whole wheat then. The dough is already challenged by more acidity because of the nature of whole grains, and I don’t want to add more acidity from a whole wheat starter. But you do you, if you prefer more acid load. Or you could feed your white starter just once with whole wheat as opposed many time before you add it to your dough. My preference is white starter for 100% whole wheat. It’s very important to know the whole wheat flour you’ve chosen very well. While practicing, you might want to test different flours individually as opposed to mixing a dough with different kinds of whole grains. I’ll continue improving and when I’m completely happy, I’ll share more.

Ingredients: • 4 cups (480 g) whole wheat flour • 1½ tsp salt • ½ tsp yeast (active dry or instant) • 2 cups + 2 tbsp (500 g) lukewarm water (No more than 110 degrees) 1 tbsp honey 1 tbsp oil (I use olive oil) Instructions: Mix everything in a bowl. Cover and ferment 12–18 hours on your counter. For 1 loaf: Preheat oven to 450°F. Bake 30 minutes covered with another loaf pan. Remove loaf pan lid and bake 5- 8 more minutes. Make 2 separate loaves. Preheat oven to 450°F. Bake 22–25 minutes covered with another loaf pan. Remove loaf pan lid and bake 5 more minutes. Remember you can always use aluminum to cover for steam! #realbread #fermented #wholewheatbread

Tender, nutty, and naturally fermented 🌾 A blend of whole wheat and all-purpose flour for a loaf with beautiful structure and soft, satisfying crumbs 😇 Ingredients: 225 g white flour 225 g whole wheat flour 360 g water ( save 60 g of it and add it with the salt) 95g bubbly starter 8 g salt Method: Mixed flour + water + starter and rested 30 min. After 30 min, added salt. 4 sets of coil folds 45 minutes apart, when it’s ready shape, and transferred to basket. Rested 15 min at room temp, then cold proofed 12 hours. This bread has no preservatives or chemicals. The potato is game changer here & will give you the softest results. 2 cups Whole wheat Flour or 1 cup / 125 g Whole Wheat Flour + 1 cup / 125 g Maida (You can use whole wheat also but this will give you lighter results, the choice is yours) 1/4 cup / 60 g Water 1/4 cup + 2 tbsp / 90 g Milk 2 tsp Sugar 3/4 tsp Dry Yeast 3/4 tsp Salt 100 g Boiled & Mashed Potatoes (approx 1 Medium Potato) 2 tbsp / 30 g Butter Milk + turmeric & little sugar for brushing on top & some additional butter for brushing post baking. For the tangzhong roux , combine 1 tbsp Atta with 2.5 tbsp milk from the pre measured quantity. Not additional. Bake at 190 degrees C for 20 mins You can simply use 50:50 atta maida & look at ways to add more fibre with what you add in. Here are few Key Steps for Bread Making.
