FORECIPE DOWN HERE 👋⬇️
Creamy roasted red pepper and garlic linguine 🍝
This is the ✨EXACT✨meal I made for my dinner (and my 3 other family members) as a 16yr old!
➡️Here to highlight to all you teens that no foods are ‘good or bad’ for you- yep health is soooo OVER COMPLICATED now days so I’m 🙋🏼♀️ here to show you how simple cooking can be 👩🍳- i’ll show you how to ADD nutrients into your diet rather that removing or restricting anything 🙋🏼♀️
Trust me when I say this pasta dish will be added to your weekly shop- it certainly is for me 👇🏻
Ingredients served 3-4
🍝1 large red pepper
🍝1 white or red onion
🍝1 head of garlic
🍝Good glue of oil
🍝2tbsp of paprika
🍝1tbsp mixed herbs
🍝Generous amount of salt and pepper
🍝3-4 servings of pasta (& the reserved pasta water)
🍝Handful of fresh basil
🍝1 can of full fat coconut milk
1. Slice your red pepper and chop the head of your garlic and add this into either your oven or @ninjakitchenuk air fryer for about 20-30 minutes at 180- with a good glug of oil
2. Fry your onion in a pan along with olive oil!
3. Then once your peppers and garlic are roasted add these into the pan and fry for a few more minutes.
4. Add your herbs and paprika and let it all get fragrentttttt
5. Then heat a pan up for your pasta and add that in (remember before your drain it to reserve the pasta water)
6. Then add your coconut milk into your pan and mix well
7. Add all the contents of the pan into your blender I used my @ninjakitchenuk blast blender (THE BEST)
8. Add your basil and about 1/3 cup pasta water, S & P and blend.
9. Pop the pasta into a pan, add your sauce and enjoy everyone
Top with any protein sauce of your choice, and even meal prep this for when your back from college to devour!

the downside- you sell your body. i have aches that come and go and some that stay forever. i don’t regret it though. learn a trade and you’ll never go hungry but take time off when you can to spend time with your family and loved ones.” ❤️
