Acidity builds and harmful bacteria can’t survive. Botulism? It can’t grow in acid. Can’t grow below pH 4.6. And can’t grow in oxygen. Proper ferments hit all three — which is why botulism in ferments is virtually nonexistent. You don’t need a lab. You don’t need a biology degree. Ingredients: -cabbage (I have used half) -1 beetroot, chopped -celery leaves or stalks -1 garlic clove, sliced -1 teaspoon peppercorns -dill or parsley Brine: -500ml filtered water -1 tablespoon sea salt Instructions: 1. Slice the cabbage into chunks. 2. Place them in a glass jar, together with beetroot, garlic, peppercorns and fresh dill. Mix the salt with water, stirring continuously until salt is dissolved. 3. How to make cured lemons - depends on how you want the final product, decide on the beginning on what state you ferment it Lemons Garlic Chili 2.5% salt Cut the lemons in slices, i like to cut the lemons in half and core them from all the pits Then i mix in a bowl all of the ingredients and mix well with teh salt while leaving a little bit on the side to top everything off. In this ferment like every lacto ferment, its important to keep the ferment with no oxygen Once we mix everything together we pack the jar as tight as possible. After one week, the ferment will be ready and we can enjoy. Keep in fridge and use sterlize utensils. Aioli with cured citrus 2 egg yolks or 100ml / unsweetened soy milk 1 garlic clove 30 g lemon juice 20 g vinegar 10 salt 75g cured citrus 350 avocado oil or neutral oil Blend everything together besides the oil, once homogenized start drizzling the oil in slowly, until becomes cohesive. Store in an airtight container for 3 days. Scorching shrimp pan Peeled shrimp Garlic green chili Fermented lemon Olive oil Heat pan for 15 minutes Add all ingredients after mixed well and cook for another 5 minutes to get a little color Serve hot! Pasta al limone 250g dried linguine 75 gram cured citrus 100 gram cream Salt pepper 30 gram butter Bring a pot of salted water to boil Once water is boiled add pasta and cook 2 minutes under recommended time (will continue the cooking in the sauce) In a pan add cream and chopped cured citrus Once reduced add some of the past water and whisk together to homoginze Once the pasta is al dente move to the sauce where it can cook inside and absorb the sauce as much as possible and add butter. Add pasta water if needed in order to make a glossy cohesive sauce. Top with some citrus kosho or strachetall or fresh shrimps on top to your liking.
