Menurut penjelasan Pak Bambang, Dosen dan Expert bidang Teknologi Pangan (Head of Food Technology UNPAD) tiap metode punya kelebihan dan kekurangan masing-masing. Di suhu rendah, nutrisi alami terjaga, tetapi perlu usaha lebih untuk menyimpan dan menghangatkan. Pasteurisasi tidak memiliki usia simpan yang panjang dibandingkan sterilisasi, tetapi, sterilisasi suhu/tekanan tinggi berpotensi merusak nutrisi.
