E quindi ve la ripropongo 3 uova 3 tuorli Guanciale q.b 100gr ogni 100gr di pasta Pecorino stagionato 100gr ogni 100gr di pasta Parmigiano 100gr ogni 100gr di pasta Spaghetti a piacere a seconda di quanti ne volete fare ! Facciamo sudare il guanciale in padella Quando diventa croccante lo togliamo e lasciamo il grasso nella padella Intanto mettiamo l’acqua a bollire e ci buttiamo la pasta Mescoliamo i formaggi in un contenitore E con l’acqua di cottura otteniamo una crema In un ciotolo apparte rompiamo le uova e sbattiamo i tuorli fino ad ottenere un composto spumoso Uniamo le uova sbattute alla crema di formaggi E creiamo un composto Mettiamo la pasta a finir di cuocere nel grasso del guanciale e poi alla fine incorporiamo la crema a fuoco spento e mescoliamo ! Infine. Aggiungiamo il guanciale croccante e mangiamo😋❤️ Inglese🏴󠁧󠁢󠁥󠁮󠁧󠁿 SPAGHETTI CARBONARA 🍝❤️ 3 eggs 3 yolks Guanciale q.b 100gr for every 100gr of pasta Seasoned Pecorino cheese 100gr every 100gr of pasta Parmesan cheese 100gr every 100gr of pasta Spaghetti to taste depending on how many you want to make ! We sweat the guanciale in a pan. When it gets crispy we remove it and leave the fat in the pan Meanwhile, we put the water to boil and throw in the pasta We mix the cheeses in a container And with the cooking water we obtain a cream In a separate bowl we break the eggs and beat the yolks until frothy We combine the beaten eggs with the cream cheese mixture And we create a mixture We put the pasta to finish cooking in the guanciale fat and then finally incorporate the cream with the heat off and stir ! The recipe was created in the 1950’s by Norma Pielli, the chef of the hotel and restaurant Roma in the little town of Tolmezzo, in Friuli Venezia Giulia 😍 People used to come from all over the region to taste this special dessert made with mascarpone cheese, coffee and biscuits. Who would have ever known that this simple dessert would have become so popular all over the word? 🥰 The secret for a perfect tiramisu is to whip your egg whites and incorporate them into the mascarpone cream. Also, make sure you use cold coffee for your biscuits and always make it the day before to make your tiramisu… MAMMA MIA 🤤 Ingredients: -4 eggs -300g sugar -500g mascarpone -40 Savoiardi biscuits -300ml coffee -100g cocoa powder Separate 3 egg yolks from the whites and whisk these last ones with a pinch of salt. In another bowl, mix the 3 egg yolks with a whole egg and sugar for a couple of mins. Incorporate the mascarpone and the whipped egg whites and set aside. In the meantime dip your Savoiardi into some cold coffee and layer your tiramisu, alternating your biscuits with cream. Perfect Cacio e Pepe Everytime.... Ingredients: (Per Serving) - 100g Spaghetti - 50g Pecorino Romano (Grated) - 2g Freshly Ground Black Pepper - 4g Corn Starch (Optional Clump Insurance) Recipe: 1. Cook pasta in lightly salted water. Use less water than usual to increase starch concentration 2. Toast the pepper in a pan, medium heat, 30–60 sec until fragrant. 3. In a bowl, combine toasted pepper, grated cheese, and a scoop of starchy pasta water. (Optionally add the corn starch in a slurry with a spoonful of cold water) 4. Mix the sauce until smooth 5. Add the pasta and sauce to the empty pan and toss until smooth and creamy. 6. Add splashes of pasta water as needed to thin out the sauce. #cacioepepe #pasta #foodscience #italianfood

It's Carbonara Day so of course we have to make Spaghetti alla Carbonara! 🧀🥚 This is my version and I've shared some tips and tricks so that you can make it super creamy! Depending on where you are in the world it can be quite hard to find guanciale, so the best alternative will be to use pancetta. I also like to use some of the egg whites as this stops the sauce from becoming too stodgy. If you’ve never made a Pasta alla Carbonara yourself, it's time to give it a try! 🙌 Or you can join my A Taste of Rome online cooking class where we make this dish all together as well as an antipasti of delicious Polpette al Sugo, Insalata di Fagioli alla Romana as a side and Tozzetti, twice-baked hazelnut biscuits, for dessert.
