Tinned Lentil Chilli Do you remember a while ago I said I was going to figure out how to make a really good chilli using tinned green lentils? Well, I did it and it was SO good! It's ridiculously easy to make and because it uses all tinned and store cupboard ingredients, it's as cheap as chips! The secret ingredient is beef gravy granules. They make it thick and hearty and you probably already know this, but most beef gravy brands are vegetarian! If you like my recipes and you're looking for more dinner ideas, my new cookbook Easy 10 has 100 recipes...and a whole chapter on lentils! It's currently 20% off and the link to pre-order is in my profile I've written up the recipe for this below and I would love to know if you're going to give it a try, A x Feeds 4-6 Oil for frying 1 red onion finely chopped 2 cloves garlic finely chopped 1 tbsp sun dried tomato paste 1 tsp chilli powder 1 tsp ground cumin 2 tsp smoked paprika 1 tbsp honey 2 x 400g green lentils drained 400g tin of baby tomatoes 400g tin of kidney beans drained 25g Beef gravy granules (veggie) mixed with 400ml boiling water Salt and ground black pepper Heat a drizzle of oil in a large, non-stick pan. Add the onion and fry on a medium heat for 5 minutes, stirring regularly. Add the chopped garlic and fry for 1 minute. Stir in the sun dried tomato paste, spices and honey. Give it a stir and fry for a minute or two. Add the drained lentils, baby tomatoes and beef gravy. Use the back of a wooden spoon to pop the tomatoes. Stir in the kidney beans and season with salt and pepper Simmer on a medium heat for 15 minutes, stirring regularly. Meaty Meatless Meatballs 🤯🌱 by @herbifoods Inspired by the one and only @avantgardevegan, this vegan meatball recipe is sure to be the meatiest and most flavorful you've tried! Please see below 👇 for the full recipe. ⠀ RECIPE (6 portions) Meatballs: - 1/2 onion - 250g mushrooms - 3-4 garlic cloves - 3 tbsp tomato paste - 1 tbsp soy sauce - 1 cup (240 ml) red wine - 1 cup (240 ml) vegetable broth - 1 tbsp dried oregano, thyme and rosemary - salt and pepper - 200g roughly mashed beans or crumbled tofu - 3 1/4 cups (415 g) vital wheat gluten ⠀ To roast: - 1/2 cup (120 ml) red wine - 1.5 cups (300g) tomato sauce - 1 1/2 cups (360 ml) vegetable stock - 1 bay leaf - salt & pepper - a few thyme sprigs - rosemary sprig To serve: - pasta of choice - vegan parmesan - fresh basil ⠀ ❶ On high heat sauté mushrooms and onion until most of the liquid has evaporated. Reduce heat, add garlic and sauté for another 1-2 minutes. ❷ Deglaze the pan with red wine (optional) and vegetable stock, add dried herbs such as thyme, oregano and rosemary, then bring to a simmer. Add mashed chickpeas or kidney beans and simmer for 5 minutes. ❸ Add the wet mixture to a bowl along with the vital wheat gluten and some fresh parsley. Kneed firmly for at least 10 minutes. ❹ Shape into balls and set aside. ❺ Fry the meatballs until slightly browned from all sides. ❻ Add the balls to a baking pan. Add red wine, tomato sauce, a bay leaf, thyme, rosemary and a pinch of salt and pepper. You can choose the garden vegetables based on where you are in the world, what is in season and what is available to you! Make this recipe your own 💚 For the first part of the cooking I dry fried the vegetables until they had a little colour. This helps to develop a little char but also stops you from using too much oil. BBQ Pulled Mushrooms 🤎 If you’re a mushroom hater (I once was), trust me when I say that this recipe will 100% convert you!! It’s also one of my favourite fillings to use whenever I make meat-free burgers, pair it up with a crunchy slaw and you’re good to go! SAVE THIS RECIPE, it’s a must try 👏🏼 Ingredients: 400g oyster mushrooms
1 tbsp neutral oil 1 tsp smoked paprika
1⁄2 tsp garlic powder
1⁄2 tsp onion powder
1⁄2 tsp sea salt
1⁄4 tsp freshly ground black pepper 1⁄2 cup barbecue sauce
1⁄4 cup (60ml) water Method: 1. Shred the oyster mushrooms using your hands by pulling from the cap down to the base to separate the fibres. Place in a large bowl. 2. Heat the oil in a frying pan over medium-high heat and swirl to coat the base of the pan. When hot, fry the pulled mushrooms for 2 minutes until reduced down to a single layer. Once reduced, fry for an additional 7-8 minutes until golden, only turning them every 1-2 minutes for even cooking. 3. Add the smoked paprika, garlic powder, onion powder, salt and black pepper then fry for 1 minute. Reduce the heat to medium-low, add the barbecue sauce and water and cook for 2 minutes until the sauce has thickened. 4. You can use this as a filling in burgers, add it to salads/nourish bowls or really any meal you’d like!
