Perfect for busy nights, picky eaters, or when you just want something really good. Recipe below ⬇️ Save this for later Recipe: Ingredients 500g chicken breast or thigh, cut into cubes Olive oil Skewers Seasoning mix Garlic butter topping Extra grated Parmesan, to finish Seasoning Mix: 1 tsp garlic powder 1 tsp onion powder 1 tsp paprika Salt & pepper to taste Garlic Butter Topping: 3 tbsp butter, melted 2 garlic cloves, minced ¼ cup grated Parmesan Chopped parsley (optional) chilli flakes (optional) Salt & pepper Directions: 1. Toss chicken with olive oil + seasoning 2. Thread diced chicken onto skewers 3. Make Garlic Butter:
Melt butter, add garlic, parmesan, parsley, chilli, salt and pepper 4. Brush chicken with garlic butter topping 5. Air fry at 200°C (390°F) for 10–12 mins, flipping halfway. 6. Brush more of the garlic butter over cooked skewers. Sprinkle extra Parmesan on top. Enjoy xx

Juicy chicken, fluffy rice, crunchy veggies, and a creamy sweet-spicy bang bang sauce — so good and great for leftovers too! Ingredients For the chicken • 2 lbs chicken tenders, cut into bite-size pieces • 1½ tsp garlic powder • 1 tsp paprika • 1½ tsp salt • ½ tsp black pepper • ½ tbsp avocado oil or olive oil (plus extra for the pan) For the bang bang sauce • ½ cup mayonnaise • ½ cup sweet chili sauce • 2 tsp sriracha (adjust to taste) • 1–2 tsp rice vinegar or fresh lime juice • 1 tbsp honey For the bowls • 2 cups uncooked short-grain white rice, cooked • ⅓ small red cabbage, thinly shredded • 1 large English cucumber, thinly sliced • 1½ cups julienned carrots • 3 green onions, chopped (for garnish) Instructions 1. Prepare the rice: Cook the rice according to package directions. Fluff and set aside. 2. Season the chicken: Add the chopped chicken to a bowl and toss with garlic powder, paprika, salt, pepper, and oil until evenly coated. 3. Cook the chicken: Heat a skillet over medium-high heat with a little oil. Add the chicken and cook, stirring occasionally, for about 6–8 minutes until golden and cooked through. Remove from heat. 4. Mix the bang bang sauce: In a small bowl, stir together mayonnaise, sweet chili sauce, sriracha, vinegar (or lime juice), and honey until smooth. Adjust spice or sweetness as needed. 5. All other recipes are below.⬇️ Avocado Crema: 1 large avocado (or 2 small avocados) ¼ cup plain greek yogurt 1 garlic clove 1 Tbsp lemon juice ¼ tsp garlic salt 1. Add all ingredients to a food processor & blend until smooth. Salsa Fresca: Handful of grape tomatoes, chopped ¼ of a red onion, finely diced Handful of cilantro, chopped ½ - 1 lime 1. Add the tomatoes, onion & cilantro to a bowl. Squeeze your lime over the salsa & mix. Taste & adjust lime juice if needed. Air Fried Sweet Potatoes: 2 large sweet potatoes, cut into cubes 1 Tbsp avocado oil (or olive oil) Salt, to taste Black pepper, to taste 1. Toss the potatoes in avocado oil. This is episode 25: Cheesy Artichoke Chicken Bake What you’ll need: 1.5–2 lbs boneless skinless chicken thighs 1 container artichoke parmesan dip (10–12 oz) 3 cups fresh broccoli, cut into small florets (no bigger than 1 inch) 1 cup shredded mozzarella ½ cup shredded cheddar 2–3 tbsp grated parmesan ½ tsp garlic powder ½ tsp onion powder black pepper + a small pinch of salt How to make it: Preheat oven to 375°F Layer chicken in a 9x13 baking dish Season with garlic powder, onion powder, pepper, and salt Add broccoli on top Spread artichoke dip over everything — it doesn’t need to be perfect, it’ll spread as it bakes Cover tightly with foil and bake 35 minutes Remove foil and add all three cheeses Bake uncovered 10–15 minutes until golden and bubbling Rest 10 minutes before serving — don’t skip this part Come back for more if you like easy dinners 🫡 #easyrecipes #weeknightdinner #dinneridea #easydinners #easydinnerrecipes

This is the recipe I make when I want something delicious… but also want to lie down. 😂 My Peking-style beef is one of those dinners that tastes like a proper fakeaway, but comes together in about 20 minutes in one pan. The sauce is sweet, sticky and glossy thanks to hoisin, soy and a tiny bit of Chinese five-spice which makes the beef taste incredible. The trick is letting the beef caramelise before breaking it up – that’s where all the flavour comes from. Serve it with rice, noodles or whatever you’ve got in the fridge. It’s quick, budget-friendly and great for meal prep too. Ingredients: TJ’s mini chicken wontons 1 can of coconut milk 2 tbsp red curry paste 2 garlic cloves, minced 3 tbsp Kinder’s teriyaki sauce 1 cup of spinach cilantro, for topping green onions, for topping Momofuku garlic chili oil, for topping white rice, microwaveable Instructions: Add coconut milk, red curry paste, garlic, teriyaki sauce, wontons & spinach to a baking dish. Mix well & cover with aluminum foil. Bake at 400F for 30 minutes. Top with chili oil, cilantro & green onions. Serve with cooked rice. #dumplings #wontons #weeknightdinner #easydinners dinnerinspo

Part 3 of my one pan series—Cajun Chicken and Rice. Juicy, well-seasoned chicken thighs cooked over rice with Cajun spices, all made in one pan and full of flavor for a simple weeknight dinner. Save this for later ⬇️ Ingredients 4 boneless skinless chicken thighs 1 tbsp Cajun seasoning 2 tsp smoked paprika 1 tsp dried oregano 1 tsp black pepper 1 tbsp olive oil 2 tbsp oil (for the pan) 1 medium onion, diced ½ red bell pepper, diced ½ green bell pepper, diced 1 celery stalk, diced 1 Roma tomato, diced 1-2 tsp Creole seasoning 1 tbsp tomato paste 4 cloves garlic, minced 2 cups jasmine rice 4 cups chicken broth 1 tsp adobo ¼ tsp cayenne pepper 2 bay leaves 4 sprigs thyme Directions 1️⃣ Pat chicken dry and season with olive oil, Cajun seasoning, paprika, oregano, and black pepper. 2️⃣ Heat oil in a deep pan over medium-high heat. Sear chicken until browned, then remove. 3️⃣ Sauté onion, bell peppers, celery, and tomato until softened. 4️⃣ Stir in Creole seasoning and tomato paste, cook 1–2 minutes. 5️⃣ Add garlic and cook for 30 seconds. 6️⃣ Stir in rice and toast for 1 minute. 7️⃣ Pour in broth, add adobo, cayenne, bay leaves, and thyme. 8️⃣ Add chicken back on top of the rice. 9️⃣ Cover and simmer on low 25–30 minutes, until rice is tender and liquid is absorbed. 🔟 Rest 5 minutes, remove herbs, fluff, and serve. #chickenandrice #cajunchicken #onepanmeal #weeknightdinner #easyrecipes
