Roasted Beets with Garlic Dill Greek Yogurt 🫶✨ INGREDIENTS: • 2 medium beets • 1 cup plain Greek yogurt @libertecanada • 3 garlic cloves, minced • 1–2 tbsp fresh dill • 1–2 tbsp olive oil @iliada_olive_oil • salt @wholefoodscanada • black pepper • Juice of lemon INSTRUCTIONS: 1. Preheat oven to 400°F (200°C). 2. Wash the beets. Wrap them tightly in parchment paper, then wrap again in foil. 3. Bake for 1 hour 15 minutes, or until fork tender. Let cool slightly, then peel and cube. 4. In a bowl, mix Greek yogurt, minced garlic, lemon juice, salt, pepper, and chopped dill. Adjust seasoning to taste. 5. Spread the yogurt mixture onto a serving plate. 6. Top with cubed roasted beets. 7. Drizzle with olive oil and sprinkle extra fresh dill on top. Disclaimer: you DO taste the beets but it’s a nice subtle taste. The Parmesan cheese on top is KEY in giving it a nice salty taste. Toddler approved and it honestly made her day because it was PINK 💕 Ingredients: 3 cups dry pasta 8 oz cooked beets (got mine from TJs) 1 cup cottage cheese 1/3 cup pasta water 1/3 cup parmesan cheese Pepper & chili flakes (recommended for the adults) Directions: 1. Bring a large pot of water to a boil & generously salt 2. Cook pasta al dente (1 min less than package instructions), reserve pasta water & drain 3. In a blender combine beets, cottage cheese & 1/3 cup pasta water, blend until smooth 4. Pour back into the pot with pasta, let simmer for a few minutes 5. Roasted Beet Salad 🫜 Ingredients: • 4-6 medium beets • 2 tbsp olive oil • ¼ tsp salt • 2 packed cups fresh spinach @earthboundfarm • 2 tbsp red onion, thinly sliced For the dressing: • 3 tbsp olive oil • 2 tbsp balsamic vinegar • 1 tbsp Dijon mustard @maillecanada • 1 tbsp honey • 1 tbsp fresh lemon juice • ½ tsp salt • ¼ tsp black pepper • Pinch of cayenne pepper To finish • ¼ cup toasted walnuts • ⅓ cup feta cheese, crumbled @dodoni_international Instructions: 1. Preheat oven to 400°F (200°C). 2. Trim the beets, leaving the skin on. Cut into quarters or large cubes. 3. Toss with olive oil and salt, then spread in a baking dish. 4. Bake for 50–60 minutes, until fork-tender and slightly caramelized. 5. While beets bake, whisk together all dressing ingredients until smooth. 6. Beets always get extra attention around Valentine’s Day so I thought I’d share a little how to on cooking perfect beets. You have to keep the stem and tail on (no cuts!) this keeps all the beautiful color in and helps them cook more evenly in the water bath. How to: 1. Preheat the oven to 425F. 2. Trim the greens off of the beets, leaving the stems intact. Scrub the beets well under cold running water to remove any grit. 3. Arrange the beets in a wide, shallow baking dish (I’m using a 9x9-inch pan). 4. Pour in enough water to cover the beets halfway, for a 9x9-inch pan this was 4 cups of water. Season with a hefty pinch of salt. 5. Wrap the pan tightly with aluminum foil. Bake for 1 hour, or until the beets are completely fork tender but not mushy. This time will vary based on the size of your beets! 6. Cool for 20 minutes uncovered until safe to handle. To peel, push your thumbs into the skin to release it from the beet. It should slip off with zero effort. If the skin isn’t coming off, your beets aren’t fully cooked! **At this point you can use the beets for hummus, purées, etc.** - Dress the beets - Beets love vinegar, it combats that earthy, soil taste that they can have so lean into that! Cut the beets into 1-inch pieces. While they’re still warm, I dress the beets with a generous glug of vinegar (about 2-3 tablespoons for the 6 medium beets I used above). Plus another pinch of salt, some olive oil, and whatever seasoning (I went with zaatar). They absorb the vinegar best when they are still warm. **you can stop here and have those dressed beets for salads, as a side, etc.** The second roast: I like to roast my beets one more time to capitalize on their high sugar content because the become deeply caramelized and almost fudgy. Dress the beets as desired then transfer to a parchment lined sheet tray. Roast at 425F for 20-25 minutes, until they’re caramelized an a bit wrinkled. Serve with salads, as a side dish tossed with with lots of fresh herbs, or over creamy, garlicky labneh with something crunchy on top! Happy peeling!! ❤️❤️❤️❤️❤️

A beet dip for the lovers! 💘 Blend together until smooth: 3 medium beets, roasted, peeled + quartered 50g runny tahini 1 Tbsp olive oil Juice of 1 lemon 1 large garlic clove Pinch of salt Splash of water, if needed Stir together: 125g greek yogurt Juice of half a lemon 1 Tbsp olive oil Pinch of salt In three separate bowls, mix together both mixtures in different ratios to get dark, medium and light pink, making sure to leave some yogurt behind for later. Dollop all the dips onto a large platter. Finish with flaky salt and a drizzle of olive oil. Scoop up with garlic-rubbed, olive oil-soaked toast and eat with salty things (pickles, olives, feta cheese for example).

Arrange roasted beets, orange slices, and avocado on top. Add red onion and nuts. Drizzle with dressing just before serving.
