Have you ever tried this beautiful bitter melon dish? It’s one of my all-time favorite classic Chinese dish. Here’s a simple trick to reduce the bitterness, just season the melon with salt before cooking. ☺️🥬 Bitter Melon with Chicken & Fermented Black Beans Ingredients: * 2–3 medium bitter melons (about 500g total) * 1 tbsp salt (for soaking the bitter melon) * 200g chicken, cut into small pieces Seasoning: * 5 cloves garlic, minced * 2 tbsp fermented black beans * 2–3 dried chili peppers, broken into pieces * 10g ginger, chopped or thinly sliced * 1 tbsp doubanjiang (Taucu) * 2 tbsp cooking rice wine (白米酒) * 1 tbsp soy sauce * 2 tsp sugar Other: * 2 tbsp cooking oil Instructions: 1. Cut off the ends of the bitter melons. Slice them in half lengthwise and scoop out the seeds and white pith. Cut into bite-sized pieces. 2. Place the slices in a bowl, sprinkle with 2 tbsp salt, and let sit for 10 minutes. Then rinse thoroughly, squeeze out excess moisture, and drain. 3. Heat oil in a wok over medium heat. Add garlic, ginger, fermented black beans, dried chili peppers, and doubanjiang. Sauté until fragrant. 4. Increase the heat to high and add the chicken. Stir-fry for about 3 minutes, or until the chicken is halfway cooked. 5. Add the bitter melon, then pour in the rice wine, soy sauce, and sugar. Stir-fry until the bitter melon is just tender and the chicken is fully cooked. 6. When I was younger I pretended to like bitter melon so I can impress my mom, but it got to the point to where I started to really enjoy it so I guess fake it til you make it really works lol 🤷🏻‍♀️ INGREDIENTS Bitter melon (2 medium size) Scallions (3 stems) Eggs (2) Chicken buillion (1 teaspoon) Sugar (1 tablespoon) MSG (1 teaspoon) Fish sauce (2 teaspoons) Black pepper DIRECTIONS 1. Cut the ends of the bitter melon, scrape the seeds and thinly slice it. 2. Place the thinly sliced bitter melon into a bowl of salted water and let it soak for 10 minutes. Then rinse. 3. Thinly slice the scallions, separate the greens and whites & set aside 4. Whisk 2 eggs and about 1 1/2 teaspoon of fish sauce together and set aside 5. Bring a pot of water to a simmer and drop the bitter melon in for 2-3 minutes, then place in an ice bath immediately after. 6. Heat up 2 tbsp of oil in a pan and place the whites of the green onions in, then cook until fragrant and add the sliced bitter melon. 7. Season with 1 teaspoon of chicken buillion, 1 tablespoon of sugar and 1 1/2 teaspoon of fish sauce. 8. Slide the bitter melon to the side and add the scrambled eggs, let it sit to cook for 30 seconds then start scrambling it into the bitter melon 9.
