CH🇬🇧 Blue cheese panna cotta, infused red cabbage, herbs oil 🌿🩷
🇮🇹 Panna cotta al Gorgonzola, infuso di cavolo rosso, olio alle erbe 🩷🌿

👇🏻Recipe x 4 people/ Ricetta x 4 persone👇🏻
🇬🇧 • Ingredients:
200 gr blue cheese
100ml fresh cream
1 soaked gelatine leave
3 red cabbage leaves
Lime juice
👉🏻 Cut the blue cheese in cubes and put it in a pot with cream. Melt everything at low fire. Once the cheese is melted, add the gelatine leave. Blend with a minipimer and filter the liquid. Add the liquid in your quenelle mold. Freeze for 3 hours. Meanwhile put the cabbage leaves in 400ml of cold water. Bring to simmer and let infuse for 5 minutes. When you want to serve the dish, remove the cheese mousse from the mold and let defrost for 30 mins. Plate up with calendula and oxalis, finish with herbs oil (find the recipe in my previous video). Enjoy ✨

🇮🇹 • Ingredienti:
200 gr di gorgonzola
100ml di panna fresca
1 foglio di gelatina ammollato
3 foglie di cavolo rosso
Succo di lime
👉🏻 Taglia il gorgonzola a cubetti e mettili in una pentola con la panna. Sciogli il tutto a fuoco basso. Una volta sciolto il formaggio, aggiungi il foglio di gelatina. Frulla con un minipimer e filtra il liquido. Aggiungi il liquido nello stampo per quenelle. Congela per 3 ore. Nel frattempo metti le foglie di cavolo in 400ml di acqua fredda. Riscalda a fuoco lento e lascia in infusione per 5 minuti. Quando vuoi servire il piatto, togli la mousse al formaggio dallo stampo e lasciala scongelare per 30 minuti. Impiatta con calendula e acetosella, termina con olio alle erbe (trovi la ricetta nel mio video precedente). Godi✨
