IRISH BROWN BREAD IS FOR EVERYDAY… but it sure does feel extra special on St. Paddy’s😉 wishing you all the best of luck today and everyday🍀 this bread is so nutritious, hearty and delicious. eat it with butter and jam, soup/stew or as an open faced sandwich!! it could not be easier to make, try it out and lmk how it goes!🫶🏼 RECIPE 210 g (1 3/4 cups) whole wheat flour 150 g (1 1/4 cups) all-purpose flour 30 g (1/3 cup) rolled oats 6 g (1 tsp) salt 5 g (1 tsp) baking soda 28 g (2 tbsp) cold butter, cubed 1 large egg 320 g (1 1/3 cups) buttermilk 20 g (1 tbsp) molasses or honey Combine all dry ingredients. Crush the butter into the drys with your fingers. Mix buttermilk, egg and sweetener of choice. Add to your drys. Mix using a big claw hand. Try not to smoosh it between your fingers, you are just trying to get all the dry ingredients together. It will be very sticky! Dust flour into your hands if needed. Plop it onto your counter and quickly shape into a ball. Place on your baking sheet and flatten till it’s about an inch thick. Bless the bread (cut a cross into it!) and let the fairies escape (poke a hole into each wedge). Brush with any leftover buttermilk/egg mixture and top with more oats. Bake at 425F for 10 minutes then drop to 400F and bake for an additional 20-25 minutes. Try not to open your oven, the bread needs that initial heat to pop! Brown Bread vs Whole Wheat. What’s Really In Your Bread? Britannia Brown Bread. First ingredient is Atta 36%. Then Refined Wheat Flour The brown color? Caramel food dye This is not brown bread. It’s white bread in disguise👇 Flipped two bread packets today. What I found should be on every breakfast table in India. Britannia Brown Bread: Atta only 36%. Refined Wheat Flour listed right after with no percentage. Caramel Colour 150a to make it look brown. Fiber: 2g per 100g. Modern Multigrain: Whole Wheat Flour 48%. No maida. No palm oil. No caramel dye. Fiber: 7.7g per 100g. Almost 4x more fiber. Zero deception on the label. And it’s not just Britannia. I checked Modern Brown Bread, same Atta 36%, same Refined Wheat Flour, same Caramel Colour 150a. Two different companies. Almost identical ingredient lists. This is not one brand being lazy. This is an industry-wide standard. In India the term “Brown Bread” is not legally defined by FSSAI. Any company can put maida as a primary ingredient, add caramel dye, and legally call it Brown Bread. Same playbook as Bournvita calling itself a health drink for 50 years until FSSAI forced the label removal in 2024. Three things to check every time you buy bread: First ingredient must say Whole Wheat Flour or Atta above 40% Fiber minimum 3g per 100g Caramel Colour 150a anywhere in the list? Put it back Not sponsored. No brand deal. Just two packets I picked up myself. Happy St. Patrick’s Day from your Irish chef. Today we are making Traditional Irish Brown Bread. No yeast. No fuss. Just a few ingredients and a hot oven. This is the bread you find all over Ireland. Served with thick Irish butter, smoked salmon, or a bowl of soup. Rustic, hearty, and ready in under an hour. Traditional Irish Brown Bread Ingredients�2 cups whole wheat flour (I used @bobsredmill ) �1 cup all purpose flour�1 teaspoon baking soda�1 teaspoon fine sea salt�1¾ cups buttermilk Instructions Heat oven to 425°F. Line a baking sheet or cast iron pan with parchment. In a bowl mix the whole wheat flour, all purpose flour, baking soda, and salt. Make a well in the center. Pour in most of the buttermilk. Mix with your hand until it just comes together. Add the remaining buttermilk if it feels dry. The dough should be soft but not sticky. Turn onto a lightly floured surface and gently shape into a round loaf about 2 inches thick. Do not knead. Place on the baking sheet or cast iron pan and cut a deep cross on top with a knife. Bake 35 to 40 minutes until the crust is firm and the bottom sounds hollow when tapped. Let cool at least 20 minutes before slicing. Serve thick slices with salted Irish butter.
