S’mores cookie bars Ingredients 1 1/4 (185g) cups all purpose flour 1/2 cup (115g) unsalted butter, melted and cooled 1 tbsp vanilla bean paste 1/2 cup(100g) light brown sugar 1/3 cup (67g) cup granulated sugar 1 large egg, room temp 1/2 tsp baking soda Pinch of salt 1 1/2 cup semi sweet chocolate chips 1 1/2 cup mini marshmallows 8 sheets of graham crackers Method: Preheat the oven to 350 F. Make dry batter: In a mixing bowl combine all purpose flour, baking soda and salt. Mix well and set aside. Make wet batter: In a separate bowl add melted butter along with light brown sugar and granulated sugar. Mix for 3 min until smooth paste forms . Crack in the egg and add vanilla beans paste, whisk for 2-3 min until the batter light in color. Add the dry batter to the wet batter. Add in 1 cup of chocolate chips. Reserve the remaining for later use. Mix the cookie dough until just combined. Do not over mix the batter. Take a 9*9 baking dish line with parchment paper. Spread a layer of graham crackers on the base. Add half of the cookie batter on top spread it evenly. Add a layer of marshmallows on top. Top it with the remaining chocolate chips. Add the remaining cookie dough on top. Bake for 25-28 minutes or until the cookie marshmallows are melted and cookie dough is lightly golden from the top. Brown Butter chocolate chip cookie bars / Blondies Ingredients: - 1/2 cup (115g) unsalted butter, melted and cooled - 2 tbsp neutral oil (avocado oil works well) - 1/2 cup (100g) light brown sugar - 1/3 cup (67g) granulated sugar - 1 large egg, room temperature - 1 tbsp vanilla extract - 1 1/4 cups (185g) all-purpose flour, spooned and leveled - 1/2 tsp baking soda - 1/2 tsp flaky sea salt - 1 1/2 cups semi-sweet chocolate For garnish: - Flaky sea salt Method: 1. Preheat oven to 350°F (175°C). 2. In a medium saucepan over medium heat, melt the butter. Once boiling, swirl the pan or stir constantly until the butter turns a deep amber color (brown butter). 3. In a bowl, whisk together flour, baking soda, and salt. Set aside. 4. In a separate bowl, combine cooled brown butter, oil, brown sugar, and granulated sugar. Whisk 1-2 minutes until a smooth paste forms. 5. Crack in the egg and add vanilla extract. Mix until well combined and the mixture turns into a smooth paste (2-3 minutes). 6. cheesecake stuffed brown butter chocolate chip cookie bars 😍✨ the definition of perfection, these cookie bars are absolutely delicious 🙌🏻 brown butter chocolate chip cookie bars that are stuffed with cheesecake filling and topped with flaky sea salt 🤩 they’re full of flavor and definitely a repeat recipe for me! still working on the blog post for this one, but for now, the full recipe is below 💕 ✨ cheesecake filling 12 oz cream cheese, room temp. ⅔ cup granulated sugar 1½ tsp vanilla ✨ cookie dough 14 tbsp unsalted butter ¼ cup granulated sugar 1½ cups brown sugar 2 eggs, 1 yolk at room temperature 3 tsp vanilla extract 2¼ cup + 1 tbsp all-purpose flour 1½ tsp baking soda ¾ tsp salt 1 cup semisweet chocolate chips ½ cup mini chocolate chips Flaky sea salt (for topping) Preheat the oven to 350 degrees Fahrenheit. Line a 9 inch square baking pan with parchment paper. Spray with nonstick cooking spray. In a bowl, mix together the cream cheese, granulated sugar & vanilla until it’s smooth. Chill in the refrigerator. Brown unsalted butter on the stove over low to medium heat. Cool for 10 minutes. In a bowl, combine the all-purpose flour, baking soda & salt. Set aside. In a large bowl, whisk together the granulated sugar, brown sugar & brown butter. Whisk in eggs, egg yolk & vanilla extract. Fold in the dry ingredients with a rubber spatula until a few flour streaks remain. Gently add in the semisweet chocolate chips and mini semisweet chocolate chips. Spread half of the cookie dough in the prepared baking pan. Add the cheesecake mixture on top & spread into an even layer. Roll the remaining cookie dough into small balls & place on top of the cheesecake layer. Place the pan in the oven & bake for about 27-30 minutes until the bars are set & golden on top. Start checking your cookie bars at the 25-minute mark. Take the cookie bars out of the oven & let them cool. Chill in the refrigerator for a few hours or overnight before slicing. The recipe makes 12 larger or 16 smaller cookie bars. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.

UPDATED RECIPE 🤎🧸 S’mores cookie bars Ingredients: For the cookie dough: - 160g unsalted butter, softened - 100g granulated sugar - 80g brown sugar - 1 egg + 1 egg yolk - 1 teaspoon vanilla extract - 220g all-purpose flour - 5g baking powder - 80g semi sweet chocolate chips - 50g graham crackers/digestive biscuits/butter cookies, crushed For the layers: - Graham crackers or butter cookies/digestive biscuits - 100g milk chocolate - Marshmallows Directions: 1. To make the cookie dough, first mix together the softened butter with the sugars, then add the egg along with the egg yolk and mix until fully incorporated. I used an electric hand mixer here but a whisk works as well. 2. Next, mix in the flour and the baking powder until just combined. No need to overmix! 3. Lastly, fold in the chocolate chunks/chips and the crushed digestive biscuits/graham crackers. 4. Refrigerate for 30 minutes. 5. Preheat the oven to 180C and line a 20 cm square cake tin with baking paper. 6. Now, take the lined cake tin and press about 3/4th of the dough on the bottom of it. Using gloves will help prevent the dough from sticking to your hands. 7. Next, place a layer of digestive biscuits/graham crackers on top the dough. 8. Then place a layer of chocolate on top of the biscuits. Use milk or dark, whatever you prefer. 9. Lastly, add some marshmallows and cover them with the rest of the cookie dough. 10. Bake in the preheated oven for about 25 minutes. 11. Once ready and while still hot, top with more chocolate chips. 12.
