BEBROWN BUTTER BROOKIES
brown butter:
339g (or 1 1/2 cup) butter (unsalted
brownies:
130g (or 1 4oz bar) chocolate (chopped, I used 60% dark)
75g (or 3/4 cup + 1 tbsp) Dutch processed cocoa powder
dash of vanilla extract or paste
325g (or 1 3/4 cup packed) light brown sugar
3 large eggs (room temp)
115g (or 3/4 cup + 2 tbsp) all-purpose flour
pinch of salt
85g (or 1/2 cup) chocolate chips (I used semi-sweet)
cookies:
60g (or 1/4 cup) granulated sugar
140g (or 3/4 cup) brown sugar
2 large eggs (room temp)
1 tsp vanilla extract/paste
190g (or 1 1/4 cup) all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 tsp espresso powder (optional but enhances the chocolate really nicely)
100g (or 1/2 cup) chocolate chips
directions for brownies:
preheat your over to 350F (180C). brown your butter separate to 2 bowls, leaving one to cool. Add to the hot one your chopped chocolate. mix until melted. add your cocoa powder and vanilla extract and mix until fully combined and set aside. in a separate large bowl, combine your brown sugar and eggs and whisk until light in color and fluffy. This may take a few minutes (3 to 4 by hand, about 2 mins with an electric mixer). pour in your chocolate and brown butter mixture and mix until combined. add flour and salt and fold with a rubber spatula until flour is nearly mixed in. just mix until most of the flours mixed in. add chocolate if desired and fold to evenly distribute. set aside.
directions for cookies:
once brown butter is cooled, combine with brown and white sugars and mix. add your egg and mix for a minute or two until the mixture is paler and thicker. add your vanilla and mix to combine. add your dry ingredients, except your chocolate, and fold with a spatula until almost all the flour is mixed in. there should still be a few streaks of flour visible. add your chocolate and mix until no flour remains.
in a parchment lined 8x8 pan, alternate transferring your doughs and allow to bake for 35 to 45 minutes, checking at about 30 minutes with a knife. if it comes out mostly clean, it’s ready to be taken out.

JUI think this is genuinely my favorite tree ice cream of the series thus far. Each element plays together perfectly, but the most surprising was definitely the flavor of the wood cream itself. Plum wood! It’s super tasty! Who knew?? Gimme all the cyanide you got, I guess! (Actually, don’t do that. That would be not great).

SUOreo Cheesecake 😍
Ingredients
• 16oz cream cheese (room temp)
• 3 eggs
• 1tbsp vanilla
• 3/4 cup heavy cream
• 1/4 cup sugar
• 16 Oreo cookies (whole sandwiches)
Crust:
• 32 Oreo cookies (whole sandwiches)
• 5 tablespoons melted butter
Preparation:
• Blend all ingredients and pour into a 7inch springform cake pan lined with parchment paper and your prepared crust
• Place a baking pan in the bottom rack of the oven with 1 inch water
• Place cheesecake in the middle of the oven
• Bake at 350°F for 40 minutes, cheesecake will be jiggly
• Cool completely at room temperature and then refrigerate for 6 hours before un molding
• Slice, serve and enjoy!

MOINSANEEEE Kinder Bueno Cookie Pie
Ingredients:
135g Light Brown Sugar
55g Caster Sugar
115g Melted Unsalted butter
1 Large / Medium Egg
1 tsp Vanilla Extract
275g Plain Flour
1 tsp Bicarbonate Soda
1/2 tsp Salt
1 tbsp Cornflour
126g Kinder Chocolate (6 x bars)
100g Milk Chocolate Chips
4 x Kinder buenos (8 x Bars)
120g Hazelnut Spread (or nutella)
Method
- Whisk together sugars and melted butter until smooth
- Add egg & vanilla extract, whisk until combined
- Sift in flour, bicarb, salt & cornflour. Fold until combined.
- Fold in Kinder Chocolate & chocolate chips
- Split your dough into 8
- Press 1 x ball into a 5” ramekin
- Drizzle over Hazelnut spread & add 1 x kinder bueno Bar
- Flatten 1 x ball of cookie and seal everything in
- Repeat last 3 steps to make 4 x Desserts
- Preheat oven to 175°C (fan)
- Bake for 5-7 minutes or until the top looks ‘dry’, if the top looks wet bake in 2 minute intervals
- Once baked, add 1 x bueno bar to each ramekin, allow to cool but serve warm
NOTES
- This recipe makes 4 x 5” Desserts. Half the recipe if you don’t need that much, or just use what you need and freeze the rest of the cookie dough for later.
- I use 5” ramekins, but any similar size will work. Just be careful not to overfill your dish. And keep in mind you may need to adjust baking times
- Once baked, eat within 2-3 days. Or you can freeze it once baked too.
