American cheese is NOT real cheese… 😱 And don’t just trust me, ask the FDA… According to the FDA, American cheese is a “pasteurized processed American cheese food”…🧐 In order for a food to be deemed as “cheese” by the FDA, more than half of the food content must be cheese… In American cheese, less than 50% of the contents are actually cheese, so the FDA does NOT classify American cheese as actual cheese…🤯 WHAT!?! And you wouldn’t believe how many restaurants and fast food places use this processed fake chemical “processed cheese food” on their burgers and sandwiches… And the amount of parents that buy this “cheese” for their kids…👎 This is why it’s so hard today to be healthy. You can’t even trust the cheese!! Let’s take a look at the non-cheese ingredients in American cheese: Milk protein concentrate, whey, calcium phosphate, sodium phosphate, modified food starch, lactic acid, colorings, and more!! Your raw cheese is pasteurized and you don’t even know it. Did you know that Organic Valley heats their “raw” milk to 155-158°F for 15 seconds? And that legal pasteurization is 161°F for 15 seconds? And that their raw cheese is three degrees away from being fully pasteurized? And that the FDA has no standard for what raw actually means so they can legally call it raw? Did you know that at 155°F every probiotic is dead? Every enzyme is destroyed? Every fat soluble vitamin is degraded? The living bacteria, the intact enzymes, the bioavailable nutrition you paid premium prices for — gone before it reaches your mouth? Did you know truly raw cheese is never heated above 102-110°F? Milk comes out of the cow at 102°F. Everything above 110°F starts killing the biology that makes raw dairy beneficial. By 150°F it’s pasteurized in everything but name. Did you know most store bought raw cheese uses vegetable rennet — a processed microbial enzyme — instead of animal rennet which humans used for thousands of years? Animal rennet breaks down casein more completely making the cheese more digestible and bioavailable. Vegetable rennet is a cheap substitute so companies can cut costs. Aged Gouda is one of the safest store options. Authentic Gouda uses animal rennet and the long aging naturally breaks down casein. Look for imported Gouda aged 12+ months with “milk” not “pasteurized milk” on the label. Real raw cheese comes from a local farm. Ask three questions. Temperature. Rennet. How the animal was raised. Under 110°F. Animal rennet. Grass fed. That’s real raw cheese. STOP buying bagged shredded cheese! 🧀❌ Here’s why? 👉 It’s rarely just shredded cheese… Some other common ingredients you’ll find include: ❌ Anti-caking agents (typically potato starch or cellulose - aka: wood pulp!) ❌ Unlabeled GMO sources from cross-contamination during production and storage, environmental toxins and other by-products from sourcing and producing certain synthetic ingredients from the likely GMO grain diets many of the milk cows were fed. ❌ Antifungals such as Natamycin (these antifungals can end up wrecking your gut microbiome). 👎 Even worse is the PACKAGING! Shredded cheese is sold in plastic bags similar to Ziploc bags (which can add more toxic ingredients like microplastics, phthalates, and other hormone and gut health disruptors to your shredded cheese). This fresh cheese is easy and delicious- it’s a version of the “primosale” cheese I learned to make when I worked as a cheesemaker in Italy years ago. I start with 2 gallons of @raw_farm_usa raw whole milk and warm it up 90°F. I then add a half teaspoon of animal rennet (I buy liquid animal rennet on Amazon) - I dissolve the rennet in a few tablespoons of cold water and stir that into the warmed milk. Then I add a cup or so of Kalona buttermilk as a starter for the cheese. You can also use a commercial freeze dried cheese starter - you just want something to help the bacteria slightly acidify the milk so that the cheese is a little bit tangy. I do not recommend using yogurt as a starter - it makes the flavor too acidic. I let the milk and rennet rest for about an hour just on the stove top where I heated up the pan and then once the curd cleaves very nicely against a knife that’s inserted - check the video for this - I cut the curd and heat it to about 100 to 115° F and stir it occasionally for about half an hour while the cheese curds reduce in size. I add two heaping tablespoons of kosher salt to the curds and whey to salt the cheese. I then pour the curds and whey into a colander to strain out the curds from the way and conserve the whey. I use the whey in smoothies, in my baking instead of water, and also in soup – it’s delicious and highly nutritious as well. Meanwhile, the curd drains out slowly in a colander, this takes about half an hour, and I then unfold it. I used some fig leaves on to plate and store the cheese and keep it moist in the fridge. This cheese lasts in your fridge for a week wrapped in leaves or plastic. If you need to last longer, I recommend you double the salt you add to the hot curds, that will extend the life of the cheese to 3 weeks or so. #freshcheese #cheese #rawmilk #rawdairy #cheesemaking #homemade #fromscratc #ancestral #paleo #healthy #rawfarmdairy #anyafernald
