BAIt’s PIE season! THIS is the easiest pie crust shield that I’ve found, and it is reusable. Find a cake pan, plate or bowl that is slightly larger than the rim of your pie pan. Wrap a few sheets of foil over the pan to form the shield. Cut from the center out, aim for 8 triangles. Roll them back and then place over your pie. You can roll the triangles back further to expose more crust, or roll them inward to cover more. Add to your pie once you want to shield from further browning. • 14-16 ounces sugar cookie dough
• 8 ounces cream cheese, softened
• 8 ounces Cool Whip *or any frozen whipped topping, thawed
Fruit Options
• strawberries, rinsed and sliced

• kiwi, peeled and sliced
• berries, rinsed
• bananas, sliced **dipped in lemon juice or preservative
• peaches, peeled and sliced **dipped in lemon juice or preservative
• grapes, rinsed
• canned mandarin oranges, drained
• canned pineapple, drained
Citrus Syrup
• ½ cup white sugar
• pinch of salt
• 1 Tosp corn starch
• ½ cup orange juice
• 2 Tosp lemon juice
• ¼ cup water
• ½ tsp grated orange rind *optional

HEOne of my grandbabies turned 7 and she requested a Coconut Cream Pie for her family birthday dinner, so of course we made it.
