LONDON CHEAP EATS UNDER £10 💵 This is my series for those of us who still want to enjoy London’s food but don’t want to take out a small loan to do so 🙃 This week, I’m joined by the one and only @jacobking at @saravanaabhavanlondon which markets itself as the world’s number one Indian vegetarian restaurant so I knew there would be a good range of vegan options! 💭Lots of people told me that this was the place to go for authentic, affordable South Indian food where you’ll find lots of Indian people dining and I would agree with this! Edamame hummus & cherry tomato toasts 🫛🍅✨
Simple, easy, but SO so flavourful! I whipped these up for lunch 🥙 for my parents and as you can tell from their reactions… they absolutely loved them! 🥹💚
Here’s how you can make them too! Edamame 🫛 hummus:
Add all these ingredients to a food processor or blender and blend until smooth (or as smooth as you’d like, I love a little texture!): * 1 and 1/4 cups cooked edamame beans * Salt 🧂 to taste * 1 heaping tsp chilli 🌶️ flakes & oregano * 4 tbsps water 💦(or more if needed) * 1/4 cup vegan yogurt or cheese 🧀 ( I used @milliesvegancheese’s fresh vegan mozzarella) * A drizzle of olive 🫒 oil Cherry tomatoes 🍅:
Add 1 cup of whole cherry tomatoes to a baking pan with 1 tsp olive oil, salt and pepper.
Bake in the oven for 15–20 minutes at 200°C until bruised and tender (keep a close eye 👁️ on them!). Assemble the toasts: * Warm up 3–4 slices of your favourite bread 🍞(I used my homemade dark cocoa artisanal bread 🤎) * Spread generous amounts of the edamame hummus on top * Add optional extra edamame beans, followed by the roasted cherry tomatoes * Finish with freshly chopped basil, slivered almonds and more olive 🫒 oil Serve immediately and enjoy! 🌿✨ . . . . . . . . . . . . . . . . . #easyrecipes #plantbasedeats #veganlunch #homemadegoodness #simpleanddelicious

✨ Lunch: Black bean enchiladas, guacamole, corn salad
✨ Afternoon snack: Green pea patties with cumin lime sauce
✨ Dinner: Mushroom penne pasta with peas, tomatoes & chives
✨ Beverage: Unsweetened pea milk + lots of water
✨ Breastfeeding: 4–6x a day

AGE: 13 months old MENU: ✨Breakfast: Barbecue tofu scramble, chia peach pudding, banana ✨ Morning snack: Strawberry kiwi smoothie (+ liquid multi-vitamin with iron, b12, etc to it) ✨ Lunch: Corn + potato chowder, cumin lime avocado slices ✨ Afternoon snack: Mango smoothie ✨ Dinner: Refried red + black beans, garlic broccoli, pasta ✨ Beverage: Water 3x a day + unsweetened pea milk ✨ Breastfeeding: 4x a day What’s great about his meals is they are great menu ideas even for adults, especially those who are new to plant-based eating or vegan lifestyles! One of my favorite things to make (and even better: one of my favorite things to eats #mejdooldates for their fiber, minerals and natural sweetness- and when you add superfoods like chia, cacao and walnuts- it becomes a decadent treat. Crunchy, salty sweet and pretty dangerous because I can eat all the servings in one sitting… #chocolatelovers Date Bark with Chocolate & Nuts (5-10servings) Ingredients: 10 Medjool dates, pitted 1.5 tbsp chia seeds 2.5 tbsp natural peanut butter 1 tbsp cacao nibs 1/4 cup walnuts, roughly chopped Flaky sea salt (Maldon), to taste For the chocolate: 4 tbsp coconut oil 4 tbsp raw cacao powder 2 tbsp maple syrup Instructions: Line a small tray with parchment paper. Press dates into an even layer. Sprinkle with chia seeds and gently press. Spread peanut butter over the top. Add cacao nibs and walnuts. In a bowl, melt coconut oil and mix in cacao powder and maple syrup until smooth. Pour over the date base and spread evenly. Finish with flaky salt. Freeze 1–2 hours until set, then cut into pieces. 🇮🇹 Date Bark con Cioccolato e Noci (5-10 porzioni) Ingredienti: 10 datteri Medjool, denocciolati 1 cucchiaio e mezzo di semi di chia 2 cucchiai e mezzo di burro di arachidi naturale 1 cucchiaio di fave di cacao 1/4 tazza di noci tritate grossolanamente Sale marino in fiocchi (tipo Maldon), q.b. Per il cioccolato: 4 cucchiai di olio di cocco 4 cucchiai di cacao crudo in polvere 2 cucchiaio di sciroppo d’acero Procedimento: Fodera una piccola teglia con carta forno. Schiaccia i datteri in uno strato uniforme. Cospargi con semi di chia e premi leggermente. Spalma il burro di arachidi sopra. Aggiungi fave di cacao e noci. Sciogli l’olio di cocco e mescola con cacao e sciroppo d’acero fino a ottenere una crema liscia. Versa sopra la base e livella. Completa con fiocchi di sale. Congela per 1–2 ore e poi taglia a pezzi.
