We had to share this 🔥 reel from @primal_gourmet — it’s a must-watch if you’re grilling this summer. That black, crusty buildup on your grates? Not “seasoning.” It’s burnt-on food, grease, and sometimes even chemical residue that doesn’t belong on our food or in our bodies! Here are his top 3 grill cleaning tips we couldn’t agree with more: 1️⃣ Be cautious with steel wool – If you use it, every loose strand must be removed before putting the grates back. Those tiny metal shards can break off, stick to the grates, and end up in your food. No bueno. 2️⃣ Switch to a palmyra-bristle brush – It’s made from natural wooden fibers, not wire, and is safe, sturdy, and effective for regular maintenance. It won’t scratch up your grill or leave behind dangerous bristles, making it a smarter and safer long-term option. 3️⃣ Use a human-safe, non-toxic cleaner – Harsh degreasers can leave behind chemical residues and damage your grill over time. Grilled Piri Piri Chicken… Hi friends! Ronny here from @primal_gourmet! 🙆🏻‍♂️This is one of my favourite recipes from my cookbook. Super juicy, grilled to perfection, and loaded with flavour. It’s incredible roasted in the oven and even better when grilled. Reserve some of the marinade to baste and serve as a dipping sauce. Serve with garden salad and roast potatoes for a delicious meal #whole30 #whole30recipes #primalgourmet . 1 small yellow onion, halved ¼ cup extra-virgin olive oil ¼ cup red wine vinegar Juice of ½ lemon 4 garlic cloves, peeled 2 fresh red finger chiles, substitute piri piri peppers if available 1 (1-inch) piece fresh ginger, peeled 1 tablespoon kosher salt 1 teaspoon smoked paprika 1 teaspoon sweet paprika 1 teaspoon dried oregano ½ teaspoon cayenne pepper, plus more if desired 4 chicken quarters, substitute 1 whole, spatchcocked chicken Side salad, for serving Roast potatoes, for serving . 1. In a blender, combine the onion, olive oil, vinegar, lemon juice, garlic, chiles, ginger, salt, smoked paprika, sweet paprika, oregano, cayenne, & ¼ cup water. Blend on high speed until smooth. 2. Rinse & pat chicken dry. Put chicken in a large zip-top bag & pour in marinade, reserving ½ cup for basting & serving. Massage chicken to coat then squeeze as much air out of the bag as possible & seal. Place it on a baking sheet & refrigerate 4 hours or overnight. 3. Preheat @traegergrills to 425°F. 4. Remove chicken from the marinade, letting any excess drip off (discard the bag), & cook over indirect heat until grill marks form, around 30 minutes. Flip, baste with reserve marinade, & continue cooking until the thickest part of the thigh registers 165F to 185F (I use a @meatermade probe), around 15 more minutes. 6. Transfer to a serving platter, brush with more sauce & let rest for 5 to 10 minutes before serving with reserved sauce, side salad & roast potatoes.

Cajun Cod with Red Pepper and Spinach Cream Sauce… Hi friends! Ronny here from @primal_gourmet. 👋This quick-&-easy seafood situation (on p.177 of The Primal Gourmet Cookbook) is perfect for any day that ends in the letter ‘y’. Try it with a side of simply boiled potatoes to soak up the sauce. Not a fan of cod? Swap in fish of choice, chicken, shrimp or scallops. You’re the boss, applesauce😉 . For the Ragin’ Cajun Spice Rub: 1 teaspoon granulated garlic 1 teaspoon paprika 1 teaspoon kosher salt 1⁄2 teaspoon black pepper 1⁄2 teaspoon smoked paprika 1⁄2 teaspoon dried oregano or thyme 1⁄2 to 1 teaspoon cayenne pepper . For the Cajun Cod: 2 (8-ounce) or 4 (4-ounce) cod fillets, about 1 inch thick 1 tablespoon extra-virgin olive oil 1⁄2 red bell pepper, diced 1 shallot, diced 2 garlic cloves, finely chopped 1 cup full-fat coconut milk 2 tablespoons fresh lemon juice, plus more if needed 2 cups packed baby spinach 1⁄4 cup loosely packed fresh parsley leaves, finely chopped Kosher salt . Method: 1. In a small jar, combine all the spice ingredients. Seal the jar and shake to combine. 2. Pat the cod fillets dry with paper towel. Lightly season both sides of each fillet with the spice rub. 3. In a large non-stick skillet, heat the olive oil over med-high heat. Gently lay the fish in the hot oil & cook until the fish is medium-rare and the center of each fillet reads 110°F on an instant-read thermometer, about 2.5 minutes per side. Transfer the cod to a plate or baking sheet, tent with aluminum foil & set aside. 3. Discard all but 1.5 tablespoons of the oil from the skillet. Return the skillet to medium-high heat, add the bell pepper & shallot, & cook, stirring, until they begin to soften, about 2 minutes. Add the garlic & cook, stirring, 1 minute. Stir in the coconut milk & lemon juice & cook, stirring regularly, until the sauce has reduced by one quarter, about 4 minutes. Add the spinach & parsley & cook, stirring occasionally, until the spinach has just wilted, 1 to 2 minutes. Taste the sauce & adjust the seasoning with salt & more lemon juice, as desired. Return the cod fillets to the sauce to gently warm through, then serve.

Whole30, but make it fancy... 💁🏻‍♂️Hi everybody! Ronny here from @primal_gourmet. If you’re looking for a fun side dish, try making a Potato Galette (AKA Pommes Anna). Layers upon layers of delicious potatoes roasted until crispy on the outside & perfectly tender within. It’s super easy & requires only a few ingredients. For ultra thin slices, use a Japanese mandoline, but promise me you’ll be extra careful or you’ll cut a finger faster than you can say #TigerBlood! . Find the printable recipe on my blog (link in bio). Also, this song just felt right #primalgourmet #whole30 #whole30recipes . Ingredients: 3-4 large potatoes - Russet, Yukon Gold or Red varieties 1 tablespoon fresh thyme leaves Extra-virgin olive oil 2 tablespoons ghee flaky sea salt, such as Maldon, to taste . Method: 1. Preheat oven to 425F. 2. Scrub potatoes clean & dry thoroughly. Thinly slice into discs approximately 1/8-inch thick. 3. Brush the inside of a cold, oven-safe, non-stick skillet with 1 teaspoon olive oil. Place a potato slice in the centre followed by a ring of potato slices around it. Complete the ring by tucking the last slice underneath the first. Repeat until the bottom of the pan is filled. Drizzle the first layer of potatoes with 1 teaspoon olive oil & scatter a few thyme leaves overtop. Repeat with remaining potatoes. 4. Place the skillet over medium heat, cover with a circular piece of parchment, top with a small plate or pan & weigh down the potatoes with something heavy. Cook the potatoes for approximately 10 minutes, undisturbed, or until they develop a golden-brown crust on the bottom layer. Remove the weight & cartouche & scatter the ghee overtop. Place the cartouche back over the potatoes to prevent burning the top layer & transfer the pan to the oven. Bake until potatoes are fork-tender, 35-40 minutes. 5. Place a large serving platter upside down against the top of the pan & carefully flip the pan & the platter together to invert the potatoes. Before I go, I’m leaving you with a comforting & hearty ragù loaded with crumbled sausage, caramelized onions & fennel & wilted greens. 🤤I love it over some cauliflower purée (recipe for it in my cookbook), but it’s also great over zoodles or even roasted potatoes. Ingredients: 1 tablespoon extra-virgin olive oil, plus more as needed 1 pound mild Italian sausage 1 medium yellow onion, thinly sliced 1 medium fennel bulb, thinly sliced Kosher salt 4 cloves garlic, finely chopped 1 teaspoon fennel seeds 2 jars @Jovialfoods crushed tomatoes (around 36 ounces) 1 large bunch lacinato kale – sliced into ribbons 1/2 teaspoon freshly cracked black pepper . Method: 1. Preheat sauté pan over medium high heat. Add olive oil & heat until shimmering. Add sausage & cook, breaking it up with a spoon, until browned all over, around 12 minutes. Transfer to a bowl & set aside, reserving 2 tablespoons of fat in the pot. 2. Add onions & fennel & season with ¼ teaspoon salt. Cook, stirring regularly, until caramelized & soft, around 12 minutes. Add the garlic & fennel seeds & cook 2 more minutes. Return browned sausage to the pan, add the crushed tomatoes, black pepper & stir to combine. Add the kale, bring to a simmer, cover with a lid, turn heat to medium & cook 20 minutes. 3. Taste the ragù for seasoning and adjust with salt & pepper as desired. Serve over cauliflower purée or with side of choice.
