MOKartoffelmuffins mit Spargel, Sauce Hollandaise und Schinken
Zutaten für 12 Stück:
• 12 mittelgroße festkochende Kartoffeln
• Olivenöl
• Salz, Pfeffer
• 200 g Spargel (weiß/grün), küchenfertig vorbereitet und in Scheiben geschnitten
• 80 g Schinkenwürfel
• 150 ml Sauce Hollandaise
• 100 g geriebener Käse Für die
Dekoration:
• Schnittlauch in Röllchen
Zubereitung:
1. Die Kartoffeln gut waschen und in kochendem Wasser garen. Abkühlen lassen.
2. Eine Muffinform vorbereiten und einfetten.
3. Die gekochten Kartoffeln in die Vertiefungen der Muffinform legen.
4. Die Kartoffeln mit Olivenöl beträufeln und mit Salz und Pfeffer würzen.
5. Mit einem Glas die Kartoffeln in der Muffinform eindrücken, um eine Vertiefung zu schaffen.
6. Spargel, Schinken und Sauce Hollandaise in die Vertiefungen füllen. Mit geriebenem Käse bestreuen.
7. Die Kartoffelmuffins im vorgeheizten Backofen bei 180 Grad (Heißluft) ca. 25-30 Minuten backen.
8. Vor dem Servieren die Muffins mit Schnittlauchröllchen dekorieren. #smashed #potatoes #hollandaise #spargel

Ingredients:
• 1kg potatoes
• 2 tbsp olive oil
• 400 g yogurt alternative
• 25 g VEPROSA ‚light Sauce‘
• 2 tbsp vegan mayo
• 1-2 lemons
• 1 tbsp mustard
• 1 cucumber
• 1-2 red onions
• Parsley
• Dill
• Salt + pepper
➡️preparation:
Clean the potatoes, cook them in salted water and then let them cool briefly. To a

• 1-2 Zitronen
• 1 EL Senf
• 1 Gurke
• 1-2 rote Zwiebeln
• Petersilie
• Dill
• Salz + Pfeffer
➡️Zubereitung:
Kartoffeln putzen, in Salzwasser gar kochen und anschließend kurz abkühlen lassen. Auf ein
Backblech geben und zerdrücken. Dann etwas Olivenöl darauf verteilen, mit Salz sowie Pfeffer
würzen und im vorgeheizten Backofen bei 200 °C Umluft für 30-40 Minuten knusprig backen.
Für das Dressing Joghurtalternative, VEPROSA ‚Helle Sauce‘, vegane Mayo, Zitronensaft, Senf,
Salz, Pfeffer sowie gehackter Petersilie und Dill verrühren. Gurke und Zwiebeln klein
schneiden und mit den Kartoffeln zum Dressing geben, gut verrühren und servieren.
