Here are 3 levels of scrambled eggs, these are just the base techniques so you can flavour them with herbs/cheese/meat/spices as you see fit. And of course just cook the eggs to your desired doneness French style: Ingredients 3 large eggs Salt, to taste 30 g butter Freshly ground black pepper, to taste 1 tbsp crème fraiche - Whisk the eggs and black pepper together. Add in the salt when ready to cook and give it a final whisk - ⁠melt the butter in a large pan or pot and add the eggs in. Cook on a low-medium heat, constantly stirring with a whisk or spatula to break the eggs up so they don't form large curds. Keep cooking until they thicken to your desired consistency - ⁠add in the crème fraiche and give it a final mix Americas test kitchen recipe: 3 eggs 1 tbsp milk Salt and black pepper to taste 1 tbsp butter - whisk the eggs, milk, salt and black pepper together. Allow to sit for 10 minutes(Egg proteins partially loosen (salt disrupts protein bonding), which means they coagulate more gently when heated) - ⁠in the meantime, heat the butter on medium heat until it browns. Pour your eggs in - ⁠allow the egg to set for a couple of seconds, then pull the cooked egg to the center, agitate the pan after so that the liquid/uncooked egg fills the sides. - ⁠repeat the process until most of the egg is cooked - ⁠turn off the heat and cover with a lid for 1-2 minutes depending on how you like your eggs cooked Cantonese style: 4 eggs(this method is easier with more eggs) Salt, to taste 1/8 tsp white pepper 1 tsp cornstarch mixed with 1tsp water 1/4 tsp soy sauce - Whisk all the ingredients together - ⁠melt 2 tbsp lard in a wok on high heat, then slide the eggs in - ⁠use a flat ladle to scoop sheets of egg and place it on top of itself in a pile - ⁠repeat the process until the egg is cooked to your desired doneness #scrambledegg #scrambledeggs #eggrecipes #eggrecipe #breakfastidea
