For the fourth installment of my series, “Staging with” in partnership with @allclad , I visited my dear friend and mastermind behind SOS Chefs, Atef Boulaabi. She’s a beautiful soul who sources, mixes, and creates the most spellbinding spices, vinegars, syrups, pastes, and dried goods that all of the best chefs rely on to create their fare. Atef is warm, sharp, and wickedly talented, and I had the honor of visiting her home kitchen to learn how to make brick a l'oeuf, a classic snack from her home country of Tunisia. To make a l’oeuf, we flash-fried it in my All-Clad D5 Stainless cookware. For delicate meals such as this, its consistent heat distribution made for a delectable flakey dough and a perfectly cooked interior. Stainless Steel 101: Eggs (3 ways). Let me know in the comments what is your biggest struggle with stainless steel and I'll address it! SAVE this one for the future 😉. Make sure to stay until the very end to see one of the many reasons I always choose @allclad. #AllCladPartner Tips for cooking eggs on stainless steel: * Properly preheating the pan is KEY for making it non stick.  It will literally close all its pores and it becomes a non stick surface. * I preheat at medium or medium low heat for about 3 min.  You can always perform the dancing water test by adding a tbsp of water and if it forms a bead and glides across, you are ready!  * Always ensure your butter melts but doesn't brown because that means your pan is too hot. * When cooking something like eggs and the temp is low, you need nothing more than a little soapy water to clean and leave them spotless.  Soft Scramble: 1. Crack 3 eggs into a bowl, add a pinch of white pepper, salt because yes you can salt them before and 1 tbsp of whole milk.  2. Whisk until smooth, strain to get smoother eggs. Check out what's left in the strainer when you do! 3. Add 1 pat of butter to preheated pan, once it melts add the eggs, cook on low or medium low heat depending on how hot your stove is. 4. Once the edges start to set and start pushing it to the center. I like large curds and custardy eggs, so I'm careful with breaking them too much and I kill the heat when they look 80% there. Add chives. Over Easy: 1. Again, strain a couple eggs & this time is to remove the watery part of the white.  2. Same thing, preheated pan and add butter. Once it melts add the eggs, season and keep the heat low to med low.  3. Let them cook unbothered for 1-2 min and then you can use a spatula to release them and they'll start gliding in the pan. Flip them carefully to cook on the other side, for about 10-15 sec for over easy. Fried/Sunny Side Up: 1. Strain eggs. 2. Preheat pan, in this case I'll be using more heat so I use about 1/2-1 tbsp of butter and 1 tbsp of oil. Let it melt and raise heat to medium. 3. Add your eggs & season. Cook until the edges are crispy, gliding them or basting them often so the fat cooks the whites.

Part 1! Growing up, one of my favorite things to do was to spend time in the kitchen with my mother and grandmother. Some of my fondest memories are of them teaching me how to prepare our family’s most treasured recipes. Many of the recipes we hold dear have been passed down for generations. The cooking methods also carry symbolic importance. Many dishes are slowly simmered or stewed for hours, reminding us of patience, community, and spending time with family. One of those recipes is this humble tea leaf egg dish. The eggs are steeped in an aromatic tea and spice mixture and come out beautifully marbled and flavorful. And while each egg has its own unique design and pattern, the recipe remains the same, and so does the cookware. I’ve had my @allclad cookware for 25+ years and have used it to make countless delicious dishes with my kids, and like my family recipes, I look forward to handing my All-Clad collection down to them, too. #AllCladPartner

DUTCH BABY ✨ (also known as German Pancake) made with a simple custard batter of flour, eggs, sugar, milk, salt and vanilla then it’s baked in the oven and puffs like a popover 👌🏻 Using the right skillet for that is key! The new @allclad Fusiontec is oven safe and works just perfect to make it. Thanks to @allclad for the product #allcladpartner Here is the recipe👇🏻 INGREDIENTS 3 eggs 2 tablespoon (36g) sugar 3/4 cup (90g) flour 3/4 cup (165g) whole milk 1 teaspoon vanilla bean paste or extract Pinch of salt 2 tablespoon (26g) butter, unsalted for the skillet Strawberries Whipped cream Powdered sugar PREHEAT THE OVEN TO 425/220C 1. Add the 2 tablespoon butter into the skillet and place into the oven while it’s preheating. You want the butter melted, not browned. Remove the skillet as soon the butter is all melted 2. Meanwhile make the batter. For that just simply add all ingredients into a blender and mix until smooth 3. Pour the batter into the hot buttered skillet and bake for 25 minutes or until light brown on top 4. Top with fresh strawberries and whipped cream and lastly dust with powdered sugar
