For the final Chasing Stars episode of 2025, I returned to a place that means more to me than most: @christoph_rueffer_haerlin Haerlin in @fairmont_hotelvierjahreszeiten Hamburg.
Not just because it finally received its third Michelin star this year, but because this is where I started this account two years ago, on December 3rd, 2023.
Back then, I wrote that Haerlin was the epitome of classical fine dining: respectful of the past, yet looking firmly toward the future. A restaurant worth travelling for.
Since then, Chef Christoph Rüffer has continued the same quiet pursuit of improvement, day by day, year by year until, in June, Haerlin earned the highest recognition a restaurant can receive, joining just 12 restaurants in Germany and around 150 worldwide to hold three stars.
The cuisine is product-driven, light and elegant yet powerful, while the service, led by Restaurant Manager Marius Jürke @j.marius_ embodies true Fingerspitzengefühl: intuitive, precise, and deeply human.
To me, Haerlin is the quintessence of German elegance. Understated. Methodical. Crafted with care. Never loud, never chasing attention.
Like a Mercedes-Benz S-Class: it’s timeless, reliable, and quietly exceptional.
