Chicken Pilaf Traybake I love the method of cooking rice in the oven & when it’s baked with chicken (especially skin on, bone in) it’s even better. In a Pilaf, rice is combined with spices & onion & cooked in stock. The result is perfectly cooked rice with lovely crispy bits on the top and around the edges. So simple, you could add some frozen peas or fresh spinach to the tray for the last 10 minutes but I served this with a fresh green salad. If you want to use breasts instead, you won’t need to sear them first - just sit them on top of the rice & reduce the roasting time. You could try the same recipe with a whole chicken too. Instructions & timings are below. Comment RECIPE & the full recipe will get sent to your inbox. INGREDIENTS for 4:- 8 chicken thighs, bone in, skin on 1 tbsp oil 1/2 tsp ground cumin 1/2 tsp ground coriander 1/2 tsp turmeric 1 tsp salt 1/2 tsp pepper For the Pilaf: 1 onion, chopped 2 garlic cloves, crushed 1 tsp ground cumin 1 tsp ground coriander 1 tsp cinnamon 1 tsp ground cardamom 2 bay leaves 250g basmati rice, rinsed in cold water 550ml chicken stock Juice of half a lemon, parsley & chopped pistachios or flaked almonds to serve METHOD:- Combine the spices, oil, salt & pepper in a bowl. Add the chicken portions & coat each one in the spiced oil. You can do the same with a whole chicken or chicken breasts. Heat a large oven proof pan. Sear the chicken skin side down for 5-8 minutes. Once the skin is golden, turn the chicken & cook for 3 minutes on the other side. Set the chicken aside & add the onion to the pan. Cook for a couple of minutes before adding the garlic & spices for the Pilaf. Cook for a minute before adding the rice. Stir then pour in the stock. Sit the chicken on top & roast at 180 fan for 45 minutes (30 mins for breasts). Fluff up the rice with a fork. Finish by squeezing over the lemon juice & sprinkling with fresh parsley & the nuts if using. If using a whole 1,5kg chicken, smear the spiced oil all over & roast for 45 minutes at 180 fan. Lift the chicken out & continue with the recipe above, returning the chicken to the tray once the stock has gone in. Roast for 45 minutes more.

Tonight for dinner we are having a quick and easy chicken & potato tray bake🙌 Ingredients: - Chicken thighs - Mixed peppers - Potatoes - Diced onions - Mature cheddar cheese - Green beans - 500ml chicken stock - Optional seasonings (smoked paprika, basil, tomato purée, garlic purée, salt & pepper) Method: - Dice the potatoes, add to an oiled roasting tray and season with smoked paprika, basil & salt & pepper. Roast @200c for 20-25 mins. - Add the diced chicken thighs to a roasting dish, along with the diced peppers, onions, tomato purée (1tbsp), garlic purée (1tbsp), and chicken stock. Season, and mix well, cover and roast for 20 mins in the oven along with the potatoes. - Once the potatoes are cooked add them to the roasting dish, mix well and top with grated cheddar. Cook uncovered for another 10 minutes, until the cheese is melted. - Serve alongside the green beans & enjoy! I think we can all agree the best kind of dinner is the one you can load onto a tray, shove into the oven and walk away from so you can get on with everything else that needs doing… or do absolutely nothing. Both are great options. 😂 This is exactly that kind of dinner – my Honey Soy Chicken Tray Bake. Super accessible, familiar, family-friendly flavours with very little work. You can use boneless chicken thigh fillets (skin on or off), and the marinade along with the red onions turns into the most amazing sticky glaze as it cooks. The trick to everything being perfectly cooked is adding the broccolini only in the last 10 minutes so it stays tender (no stringy dried vegetables in sight). Honey Soy Chicken Traybake For the sauce 1/3 cup honey 1/4 cup soy sauce 2 tbsp apple cider vinegar Chilli flakes Crushed garlic Grated ginger Bake at 200°C fan for 20 minutes, then increase the temperature to 220°C fan for the final 10 minutes If you prefer a thicker, stickier sauce, mix 1 tsp cornflour with 1 tbsp cold water, stir it through the tray once it comes out of the oven, then return it to the oven for 5 minutes to allow the sauce to thicken.

Delicious lemony chicken thighs roasted on a bed of soft sweet leeks and butter beans. Roast chicken thighs at 200c for about 30mins. Meanwhile, gently fry sliced leeks for about 8 minutes until soft, add garlic, then stock cube, then can cannellini beans (inc. juice) and then butter beans and give it all a stir and leave to simmer until chicken is done. Add chopped parsley to the beans and pour the juice of the chicken thighs into the pan with the beans then top with the chicken thighs. Back into the oven for a ten minutes and remove. Serve with a squeeze of lemon and another drizzle of olive oil and pinch of salt.. delicious! #chickentraybake #leeks #easydinner

guys this recipe is just as lazy as the filming because this wasn’t planned but it was too good not to post! 🙃 Coriander, lime & coconut chicken traybake Ingredients | Serves 4 5 chicken thighs, skin-on is preferable but I used skinless 500g potatoes, washed and sliced into thin wedges 1 large broccoli, halved and sliced into 4-5 pieces Neutral oil to drizzle Marinade: 250ml chicken stock 1 tin coconut milk (I only used the creamy bit) 1 tsp turmeric 1 tsp fish sauce ½ tbsp soy sauce ½ tbsp honey Juice and zest of 1 lime Large clove garlic, minced Fresh ginger, minced (about 15g) Small bunch fresh coriander, leaves and stalks finely chopped 5 small spring onions, finely chopped Method Set oven to 200C. Spread the potatoes in a large roasting tin and top with the broccoli and chicken Combine all the ingredients for the marinade in a jug and then pour over all the ingredients in the roasting tin. Give everything a shimmy to make sure that everythings coated in some dressing. Drizzle with oil and place in the middle (not top) of the oven for a total amount of 45 but set your timer to 25 minutes. After 25 minutes, remove the tray from the oven and using a spoon, baste the chicken and veggies in the sauce. Once everything is coated, return to the oven for another 20-25 minutes until everything is golden and cooked through. Leave to sit for a couple of minutes before serving. I like to serve this with rice. **If you are using skin on chicken thighs, add the marinade to the veggies before you add the chicken to the tray and then drizzle everything with oil this should help the skin get nice and crispy. #chickenrecipes #chickentraybake #healthychickenrecipe

Simply Better Toscano IGP Extra Virgin Olive Oil 250ml Simply Better Free Range Chicken Stock 2 packs Simply Better Irish Corn Fed Chicken Thighs, trimmed 1 carton Simply Better Red Chimichurri Sauce 1 pack Simply Better Spanish Tomatoes, cut into wedges ½ pack Simply Better Spanish Chorizo, cut into slices Simply Better Achill Island Sea Salt & Freshly Ground Black Pepper Chopped Parsley, to serve Method 1.Preheat the oven to 180°C (350°F/Gas Mark 4). 2.Cut the potatoes in half if large and put into a large non-stick baking tin with the onions and lamuyo pepper. Drizzle over 1 Tbsp. of the oil and toss to combine. Add the chicken thighs skin side down, spoon over half of the chimichurri. Flip them over so the skin is facing up but has no chimichurri on. Drizzle over another Tbsp. of the oil and season with salt and pepper. Add the chicken stock and roast for 30 minutes. 3.Coat the tomatoes in the remaining 1 Tbsp. of oil and season generously. Remove the baking tin from the oven and scatter the tomatoes and chorizo around the chicken. Roast for another 30 minutes until the chicken is tender and the skin is crispy. Leave to rest for a few minutes then drizzle over the rest of the chimichurri and the parsley then serve straight to the table

Ingredients: Chicken legs (skin on, bone in) New potatoes Chorizo (or salame) Red onions Cherry tomatoes Fresh rosemary Olive oil Honey Salt & pepper Fresh mozzarella (optional but unreal) Method: Preheat oven to 180°C. Drizzle the chicken generously with olive oil, honey, salt and pepper. Place the chicken directly onto the oven rack (skin side up) with your tray of vegetables underneath — this gives you ultra crispy skin while the juices flavour the potatoes below. In an ovenproof dish add potatoes, sliced chorizo, halved red onions, cherry tomatoes and rosemary. Toss with olive oil, honey, salt and pepper. My husband has declared this his new favourite dinner 👏🏻 You already know we are obsessed with the ALDI butterflied chicken- it’s one of our absolute essentials! There are so many yummy flavours and it’s so affordable. This new smoky bbq flavour is our new fave 🔥 It’s also DF SF EF 🥳 ⚠️ May Contains gluten, wheat, milk, soy, sesame and sulphites. Please always check the labels yourself and decide if it’s suitable for your personal situation. It’s delicious made into a rice tray bake like our previous ALDI butterflied chicken recipe or you can throw it on top of a potato bake like we have here! We lined a roasting tray with 5 small-medium potatoes and 1 medium sweet potato, peeled and finely sliced, along with some finely chopped broccoli. Then we combined 1 cup of cream (oat cream for us!) and 1/3 cup of water along with 2 tsp veg stock and a generous helping of Italian herbs and poured this over the top. Finally we placed the chicken skin side up on top of the veg mix and baked it all uncovered at 180 degrees celcius for an hour until crispy. Will you be adding this to your ALDI essentials list? Creamy Chicken Alfredo Jacket Potato Tray Bake Serves 4 Ingredients Jackets 4 large baking potatoes Olive oil spray Sea salt and black pepper 40g butter Chicken 600–700g chicken tenders or 3 large chicken breasts 1–1½ tsp adobo seasoning 1 tbsp mixed herbs Salt and black pepper Olive oil 20g butter Alfredo Sauce (made in the same pan) 2 garlic cloves, finely chopped 300–350ml double cream 1 tbsp cream cheese Black pepper 40–50g grated Parmesan 50g garlic and herb mixed cheese For layering 150–200g mozzarella or mixed cheese Extra grated Parmesan for topping Method 1. Cook the jacket potatoes Pierce the potatoes, rub with olive oil and salt. Air fry at 180°C for 45 minutes, then cook another 10 minutes until crispy. Oven option: 200°C for about 1 hour. 2. Cook the chicken Season the chicken with adobo, mixed herbs, salt and pepper. Pan-sear in olive oil until golden and cooked through. Add butter and baste for extra flavour. Remove from the pan, rest, then cut into bite-size pieces. 3. Make the Alfredo sauce Lower the heat and add the chopped garlic to the same pan. Cook for about 30 seconds until fragrant. Pour in the double cream and season with black pepper. Stir in 1 tbsp cream, Parmesan and garlic and herb mixed cheese. Simmer gently until smooth and creamy. 4. Assemble the tray bake Place all 4 crispy jackets into a large tray. Slice open and gently mash the centres with butter, salt and pepper. Add a first layer of mozzarella or mixed cheese. Scatter over the chicken. Spoon the Alfredo sauce generously over everything. Finish with more cheese and a generous grating of Parmesan. 5. Final melt Bake at 180°C for 10–12 minutes or air fry at 180°C for 4–5 minutes until golden, bubbly and irresistible. #jacketpotato #SuperHomeCook #traybake #chickenalfredo #jacketpotatoes
