18 months ago I published this recipe for the first time…and I never knew it would be the beginning of what is now my “career”. My website went crazy and my following rose….but what nobody knows is I published this recipe right before I was scheduled to have my head cut open (for the 2nd time) to remove a tumor. In such a horrific time of my life…this video was the silver lining. I was a single mom…and business was on the rise. Today, as I prepare to have my head cut open a THIRD time in just one week….I’m trying so hard to find the “silver lining”. This time around I’ll be having radiation for two months following the surgery….and I can’t quite wrap my head around this being my life…for a third time. I’m stuck between constant tears…and trying to see the light. I never want to take away from the hardship that others face…so I’m constantly telling myself not to be upset…but yesterday as I drove home I told myself…it’s ok to be upset…it’s ok to be sad…your life is changing….give yourself Grace, Nicole….but just remember…:there is a silver lining. What is that silver lining? I’m not sure yet…but I can promise you….I’m on my knees…with my eyes wide open and I know I’ll find it again, this time. In light of the upcoming events, I wanted to share this video with a little of my backstory behind it. Is anyone even reading this stuff nowadays? Who knows but I figured I’d post anyway;) I don’t know what my story will be this time, but kind of like this song I put in the background….this girl is on fire. I feel like I’m on fire…burning in my own fear….each day it gets closer I burn a little more…when on the other hand…I feel like I’m on fire…and can do what God has set out for me to do. Truth is my friends…fear is within all of us…and no matter how strong we are…it’s ok to feel fear…and if we can truly make it through those fears….we WILL BE stronger on the other side. Recipe (Serves 6-8): Ingredients: * 6 tbsp cold cubed unsalted butter * 1 large white or yellow onion, finely chopped * Kosher salt, to taste * 4 cloves garlic, minced * 4 cups Arborio rice * 1 cup white wine * 10-12 cups chicken stock * 1 1⁄2 cups pumpkin puree (adjust to taste) * Freshly grated Parmesan cheese, to taste * 16 oz. shiitake mushrooms, sliced * 1 bunch sage leaves * Olive oil * Salt and pepper, to taste * Whole nutmeg, grated, to taste * Extra virgin olive oil for garnish * Stracciatella or burrata, to taste For Crispy Shrooms and Sage: * Preheat oven to 375°F (190°C). Toss mushrooms and sage with olive oil, salt, and pepper on a sheet pan. Bake for 15-30 mins until crispy. Set aside. For Risotto: * Heat chicken stock until hot. Set aside. * In a skillet, melt 2 tbsp butter. Sauté onion with salt until translucent. Add garlic, then Arborio rice. Toast until golden. * Pour in wine; let rice absorb it. Add warm stock, one ladle at a time, stirring constantly. Cook until creamy and al dente (approx 18-20 mins). You don’t need to use all the stock, use your judgement about best consistency for you! * Stir in pumpkin puree, Parmesan, nutmeg, and pepper. Adjust seasoning. Reduce heat, add remaining butter, whip into risotto. * Plate, top with stracciatella, crispy sage, and mushrooms. Garnish with olive oil, Parmesan, nutmeg, and black pepper.
