LEMON & BLUEBERRY SOUFRA. I’m revisiting this delicious dessert from last year. Are you amongst one of the thousands that have tried it? There were countless remakes across all socials last year and I think it’s time to make it again! Traditionally prepared with a vanilla custard though lemon zest and blueberry are a fantastic combination for this dessert. Ingredients. 375g Antoniou Fillo Pastry @antonioufillopastry 600g thickened (heavy) cream 200g caster sugar 5 eggs 1 teaspoon vanilla bean paste Zest of 2 lemons 125g fresh blueberries 250g unsalted butter, melted Icing sugar for dusting Recipe tips During the second bake the soufra may rise. Once it is removed from the oven it will settle back in place. Method Before you begin this Fillo Pastry recipe, take your Fillo Pastry out of the fridge to bring it up to room temperature in its packaging. Preheat your oven to 180 degrees Celsius. Combine thickened cream, sugar, eggs, vanilla and lemon zest into a mixing jug & whisk until well combined. Set aside. Lay one sheet of Fillo pastry onto your workspace, with the short side of the Fillo Pastry facing you. Brush with butter & lay a second sheet of Fillo Pastry on top. Using your fingers, fold the Pastry in a concertina design. Transfer the folded Fillo Pastry to the centre of a 30cm round baking tray and begin to coil it in the middle to resemble a rose. Repeat with the remaining Fillo Pastry, placing it around the centre rose until the tray is full. Brush the Fillo Pastry with the remaining melted butter & bake for approximately 15 minutes or until lightly golden. Pour the custard over the baked Fillo Pastry evenly then scatter the blueberries all over, pushing some of them down into the Fillo Pastry. Transfer the tray back into the oven & bake for approximately 30 minutes & golden. This iconic Greek orange cake, known as Portokalopita 🍊, is so syrupy, easy to make and DAMN DELICIOUS 😮‍💨😮‍💨😮‍💨 I am 👏🏻 OB👏🏻 SESSED 📌RECIPE BELOW - makes 16 pieces Gather Juice of 2 oranges Zest of 2 oranges 200g sugar 225ml oil 2 large eggs 150g 0% fat Greek yoghurt 1 heaped tsp baking powder 1 tsp vanilla extra 300g filo pastry, shredded into small bits For the syrup 2 cups sugar 1 cup water 1 cinnamon stick Method 1.) Juice the oranges and set aside. Preheat the oven to 170 degrees Celsius fan. 2.) In a bowl, whisk together the sugar, oil and eggs until combined. Then pour the orange juice, add the orange zest and yoghurt, and whisk to combine once again. 3.) Add the shredded filo pastry to the wet ingredients, along with the baking powder and vanilla essence. Stir to combine. 4.) Pour the mixture into a pre-greased baking dish (I used a square one), and bake for 45 minutes until the cake has solider and become golden brown on top. 5.) In a saucepan, add the sugar, water and cinnamon stick and bring to a boil. 6.) Once the cake is cooked, carefully pour over the syrup and leave to cool before serving. #cake #greekfood #dessert #easyrecipe

Se till att spara receptet! 😊 Recept, 8 bitar: 500 g filodeg 250 g färsk spenat ca 450 g fetaost eller vitost 3 ägg 2 dl mjölk 1/2 tsk salt 1 dl tjock yoghurt, 10 % olja till formen ✔️Sätt ugnen på 200 grader. ✔️Hacka spenaten ordentlioch smula vitosten. ✔️Lägg tre filodegsark ovanpå varandra. Toppa med spenat och vitost. Vecka filodegen till en remsa. Lägg över i en oljad ugnsfast form eller plåt. Upprepa tills filodegen är slut. ✔️Gör äggsmeten. Vispa ägg, mjölk och salt. Tillsätt yoghurten och vispa ihop med äggsmeten. Häll äggsmeten längs med pajens kanter och fördela resten jämnt över hela. Tryck ner degen längs med kanterna så att de inte sticker upp och blir brända. ✔️Grädda i ugnen i 35-40 min. CRISPY PHYLLO STUFFING ROLLS Full recipe is in this week’s Substack STT 58, linked through my Linktree in bio. Crisp, buttery filo wrapped around sausage meat, dried cranberries, toasted pecans and little pockets of brie, baked into chunky, golden rounds in a muffin tin. They are perfect- I am obsessed. The stuffing is mixed first, then the brie is folded through gently so it stays in distinct, melty pieces when baked. The filo gets layered with butter and olive oil, rolled up around the stuffing into a thick sausage, sliced, and baked until deeply crisp all the way round. They reheat beautifully, which makes them ideal for hosting, but they do need to be baked first. Uncooked filo dries out fast. Once cooked, though, they’re sturdy, crunchy, and disappear quickly. A very good canapé or side. Impressive, easy to make and versatile Enjoy x

I think I’ve cracked the code for best easy tiropita so far in the series 😮‍💨 it’s gotta be these irresistibly crispy tiropita twists that are super easy to make and genuinely only contain three ingredients 🙈 📌RECIPE BELOW - makes 10 twists Gather 10 sheets of filo (I use the brand Au Ble Dor) 200g feta, crumbled 50-60g butter, melted Method 1.) Preheat the oven to 180 degrees Celsius fan. Line a baking tray with parchment paper and set aside. 2.) Lay out a sheet of filo pastry and fold it in half. Spread out the crumbled feta roughly in the middle of the sheet, and roll it to form a cigar-like shape. Gently twist at both ends being careful not to tear the filo, and place on the pre-lined baking tray. Repeat this with the remaining sheets of filo. 3.) Liberally brush melted butter on top of the tiropita twists and bake for 20 minutes until they’re golden brown. 4.) Enjoy them warm. You can also reheat them in the airfryer at 180 degrees Celsius for 3 minutes. #greekfood #easyrecipe #feta #pastry
