Our open fire cookery & butchery courses are based around the deer management here on the Phillimore Estate. Venison in the form of Fallow, Roe & Muntjac is expertly managed, it’s a hyper-local, sustainable superfood and has always been a staple of our menus here at the pub. With a little knowledge it can become a mainstay of your cooking repertoire at home. 🦌🔥 We’re excited to be bringing back more Bottle & Glass cookery classes soon. These will be a mixture of hand on & demo on the day covering everything from full venison butchery, breaking down an entire deer, to game preparation and different cooking techniques using open fire and our wood-fired oven. Using our epic @firemadeuk rigs & @gozney oven. 🔥 Expect things like salt-baked duck, cedar board trout, whole animal roasting, open fire cooking and wood-oven techniques, alongside plenty of tips and tricks from over 20 years of cooking, specialising in British game. Our tipi will become your classroom, kitchen & dining room for the day… ending, of course, with an epic feast. 🔥🥩 Perfect for serious food lovers, chefs, or anyone wanting to learn more about cooking incredible local produce.
