In Germany, this is what spring tastes like… Tender white asparagus, buttery potatoes and a warm, comforting sauce – this is one of those meals almost every German grows up with. It’s simple, seasonal and deeply rooted in everyday life. And if you’re new to white asparagus – this is the perfect place to start. ✨ And don’t throw away the peels and ends… I’ll show you what we make from them next. 🇩🇪 Classic German White Asparagus (Serves 2–3) 🛒 Ingredients For the asparagus: 1 kg white asparagus 1 tsp salt 1 tsp sugar 1 tbsp butter For the quick hollandaise-style sauce: 3 egg yolks 150 g butter (≈ 2/3 cup) 1–2 tbsp lemon juice salt to taste For serving: 500 g potatoes (≈ 1 lb) cooked ham (optional) 👩🏼‍🍳 Instructions 1. Prepare the asparagus Peel the asparagus thoroughly and cut off the woody ends. 👉 Keep the peels and ends – you’ll need them later. Bring water to a gentle boil with salt, sugar and butter. Add the asparagus and cook for 8–12 minutes until tender. 2. Cook the potatoes Peel and boil the potatoes in salted water until soft. 3. Make the sauce Melt the butter. Add egg yolks, lemon juice and butter to a tall container and blend with an immersion blender until creamy. Season with salt. ✨ This is a quick, everyday version inspired by hollandaise – not the traditional method, but perfect for busy days and just as comforting. 4. Serve Plate the asparagus with potatoes and ham, then generously spoon the sauce over the top. 💡 Tip (important!) Ep. 03 Käsespätzle with roasted onions (cheese noodles) These Käsespätzle are from a swabian (schwäbisches) recipe and thus is the way we make it. But I’m sure there are also many other ways how to make them, just like there are many other names how to call it. Recipe (5 servings): - 4 onions Cut them into thin slices - olive oil Fry them in some olive oil until golden brown - pepper - Salt to taste - Pinch of sugar Add all the spices and mix them in - cheese (Gouda/emmentaler) as much as you like Grated the cheese - 450g flour - 4 eggs - Ca. 250ml water - Pinch of salt Mix the eggs and the flour and slowly add the water until the batter gets smooth and has your desired consistency Boil some salt water and make the Spätzle Stir after a while to avoid them from sticking together When they are swimming on top get them out and layer with the cheese Cover the bowl with the Käsespätzle and keep it warm - salad - 2 tbsp olive oil - 1 tbsp vinegar - 2 tbsp heavy cream - 1/2 tsp mustard - 1 tsp agave syrup - Salt & pepper to taste Mix all the ingredients for the dressing and add it to the salad Have fun and enjoy!😊 #hausmannskost #germanhausmannskost #germanfood #deutschesessen #käsespätzlerezept käsespätzle spätzle dinnerideas dinnerrecipes

Wenn ihr den Wein stark mit Brühe verdünnt, dauert es länger, bis der Alkohol rausgekocht ist. 🍲 Daher wird in den meisten Rezepten empfohlen, erst mit Wein oder Alkohol abzulöschen, dann kurz verkochen zu lassen und erst danach die Brühe hinzuzufügen. Oktoberfest is the largest folk festival on earth and this is a German dish called Schweinshaxe (in the USA we call them Ham Hocks) & Kartoffelklöße (aka Potato Dumplings) that people eat around this time of year at the fest. I want to send a massive virtual hug/smooch to @rob_levitt at @PublicanQuality for hooking up the hog! P.S. You can totally make a version of this with pig trotters or shank, but for the real deal you’ll probably need to talk to your local butcher about getting yourself a whole “hind shank” from the ham of the hog. Zutaten für 6 Portionen: Für den Salat: 500 g Lyoner 250 g Emmentaler 1 gelbe Paprika 1 Gemüsezwiebel 5–6 Gewürzgurken 6–7 Radieschen (Optional) Für das Dressing: 2 EL Petersilie 2 EL Wasser 4 EL Weinessig 4 EL Öl 1 TL Senf, mittelscharf 2 EL süßer Senf ½ TL Salz ¼ TL Pfeffer, gemahlen 1 TL Paprikapulver, scharf Anleitung: ✅ Lyoner, Emmentaler und Paprika in feine Streifen schneiden. ✅ Gemüsezwiebel in feine Ringe schneiden. ✅ Gewürzgurken und Radieschen in Scheiben schneiden. ✅ Alles zusammen in eine große Schüssel geben. ✅ Für das Dressing Petersilie kleinschneiden. ✅ Wasser, Weinessig, Öl, Senf, süßen Senf, Salz, Pfeffer und Paprikapulver zugeben und mit dem Schneebesen gut verrühren. ✅ Dressing über den Salat geben und alles gut vermengen. ✅ Den Salat mindestens 1 Stunde im Kühlschrank ziehen lassen. #wurstsalat #dressing #vesper #germanfood
