Double Chocolate Banana Bread (sweetened with dates) 🍫 Moist, rich, and naturally sweetened with dates and overripe bananas. No refined sugar, eggless, dairy-free and full of chocolate flavor, perfect for breakfast, snack time, or a healthier dessert. Made with Native Forest Organic Coconut Milk @edwardandsons for natural moisture and richness, giving the loaf a soft, tender crumb.🍫   Ingredients •50g (about ¼ cup) dates, chopped •60ml (¼ cup) boiling water •350g (about 1½ cups) overripe bananas, mashed (3–4 bananas) •120ml (½ cup) milk (I used Native Forest Organic Simple Coconut Milk, stirred at room temp) •60ml (¼ cup) oil ( any neutral oil) •2 tsp vanilla extract •180g (1½ cups) all-purpose flour •25g (¼ cup) cocoa powder •3/4tsp baking powder •1tsp baking soda •1tsp cinnamon powder •120g (¾ cup) sugar-free chocolate chips •Add sweetener of choice (optional)   Method: -Preheat oven to 350°F (180°C). Grease an 8-inch (20 cm) loaf pan and line with baking paper, leaving an overhang. -Combine chopped dates and boiling water. Mash or blend into a fine paste. -Add mashed bananas to the date paste and mix well. -Add milk, vanilla extract, and oil. Mix until smooth. -Add flour, cocoa powder, baking powder, baking soda, and cinnamon. Mix just until fully combined. -Fold in the chocolate chips. -Pour batter into the prepared pan. Run a knife about ¼ inch deep through the center lengthwise. -Bake for 50-60minutes or until a skewer inserted in the center comes out clean with a few moist crumbs. -Cool in the pan for 30 minutes then transfer to a wire rack to cool completely. INGREDIENTS: 125ml milk 7.5ml vinegar 100g sugar 30ml oil 110g flour 3.5g baking powder 1.5g baking soda A pinch of salt 65g choc chips RECIPE: 1. Grease a small loaf pan and set aside 2. In a bowl, add in the milk and vinegar and let it rest for 5 minutes until it curdles (this is your buttermilk) 3. Once curdled, add the sugar to this and mix until it’s completely dissolved 4. Add the oil and mix it in. 5. Sift all your dry ingredients and add this to your wet ingredients. 6. Lightly coat 45g chocolate chips in flour and fold them in. 7. Pour the batter in the tin and add the remaining chocolate chips on top. 8. Bake it in a pre-heated oven at 180 degree celsius for 35-40 mins until it’s golden on top. 9. Well, I absolutely did and this Raspberry Crumble Loaf Cake is definitely one you need to add to your list ✨ With a tender cake bursting with raspberries and topped with a sweet streusel (and even more raspberries) you aren’t short of flavour with this one🙌🏻 I really hope you make it and let me know what you think! The recipe is below x #loafcake #easyrecipes #crumble #cake #raspberrycake Ingredients: (For the cake) 3 large eggs 225g caster sugar  130g double cream 185g plain flour 1/2 tsp baking powder 80g olive oil 300g raspberries, halved & coated in 2 tbsp cornflour (For the crumble) 60g unsalted butter 60g caster sugar 60g plain flour  (For the icing) 200g icing sugar  1-2 tbsp lemon juice  Method: 1. Preheat the oven to 170c and line a 2lb cake tin with parchment paper. In a large bowl, whisk the eggs & sugar until light and fluffy. Add the cream and oil, combine and whisk in the flour and baking powder. Add about 3/4 of the coated raspberries to the batter and fold in. Add to the loaf tin and crumble over the streusel topping and remaining 1/4 raspberries. Bake for 45-55 mins. (To make the streusel topping rub the butter with the sugar and flour until large crumbs form) 2. Once cool, whisk the icing sugar with the lemon juice and drizzle over the top of the cake.

It’s super easy and so delicious! 🙌 This banana bread is packed with flavour, it‘s super soft, with a caramelised crust and it’s so moist! 🤤 Sound on for full instructions 🔉 All you need is: 115g unsalted butter, melted 100g granulated sugar 100g light brown sugar 2 medium eggs, room temp 125ml whole or semi-skimmed milk, room temp 1 tsp vanilla extract 180g plain flour 1 tsp bicarbonate of soda 1 tsp cinnamon (optional but highly recommend) 1/4 tsp salt 3 ripe large bananas Bake 180C/(160C fan) 50 mins - or until a toothpick comes out with moist crumbs on it. The time will vary depending on the shape of your tin 🥰 Enjoy! #fitwaffle #fitwafflekitchen

Lemon blueberry loaf🍋🫐 Ingredients: - 1 cup granulated sugar - 1/2 cup butter unsalted, room temp - 2 large eggs, room temp - 1 tablespoon lemon zest - 2 tablespoons lemon juice - 1/2 teaspoon salt - 1 1/2 cups all-purpose flour + 1-2 tbsps of flour - 1 teaspoon baking powder - 1/2 cup whole milk - 1 cup whole fresh blueberries Lemon glaze: - 1/4 cup powdered sugar - 2 tbsps lemon curd - 2 tbsps heavy cream Directions: - Preheat your oven to 350°F and line a loaf pan with parchment paper - In a medium bowl, sift together the flour, baking powder, and salt. Set aside. - In a small bowl, mix the blueberries with 1-2 tbsps of flour until the blueberries are coated. Set aside. - In a separate bowl, cream together the butter and sugar until light and fluffy, about 3 to 5 minutes. - Beat in the eggs, lemon juice & zest. Gradually add the dry mixture in. Slowly add in the milk and once the batter comes together, scrape the sides of the bowl. Fold in the blueberries. - Pour the batter into the prepared pan and bake for 55-65 minutes. The top of the loaf will be cracked, raised, golden brown in color, and firm to the touch. 🌍🍰 Around The World In 80 Cakes - British Lemon Drizzle 🍰🌍    So I know about 93% of the world thinks all British food is just fish and chips or jacket potato and beans (which no-one really should be knocking cause fyi they’re both equally banging) BUT we do also do some cakes VERY well - battenberg (holy moly), bakewell (okay technically not a cake but factually VERY delicious) and finally my favourite...    Number 44 on the world’s most elusive list is a British Lemon Drizzle 🍋 This deliciously moist number is pretty basic in its build up - you’ll find it typically in a loaf form and with no fancy pants filling. It’s just a tender, moist, soft lemon sponge, drenched in a lemon syrup (not always but definitely recommended) and drizzled with a lemon water icing.    And that’s it. I don’t know whether I love it because it tastes of childhood (I am a sucker for the terrible loaf cakes you can buy in the supermarket) or whether it’s just simple, uncomplicated and fuss-free. Either way, you’re in for a great time unless you don’t like lemons and if you don’t - are you okay?? 🤷🏽‍♀️    To give this a go, you’ll need:    • Sponge  180 g Caster Sugar  Zest of 4 Lemons  150 g Unsalted Butter, diced & room temp  75 ml Veg Oil  3 Large Eggs  50 ml Crème Fraiche, room temp  200 g ‘00’/Cake/Plain/AP Flour, sifted  50 g Ground Almonds  2 tsp Baking Powder, sifted  30 ml Lemon Juice, fresh  • Drizzle  60 ml Water  60 ml Lemon Juice, fresh  100 g Caster Sugar  • Icing  175 g Icing Sugar, sifted  35 ml Lemon Juice, fresh    You can find the method in the pinned comments below 👇🏽 or in my newsletter this week. The reverse creaming method makes this the most SOFT, VELVETY loaf cake ever 💖 🍊 RECIPE: 🍊 ORANGE SIMPLE SYRUP 2 tbs (30ml) orange juice 2 tbs (30ml) lemon juice ¼ cup (50g) granulated sugar 🍊 Combine the orange juice, lemon juice & sugar in a small saucepan over med. heat. Stir occasionally until the sugar is dissolved. Remove from heat 🍊CAKE 1 ⅓ cups (170g) AP flour, sifted 1 ½ tsp baking powder ½ tsp fine sea salt ¾ cup plus 2 tbs (175g) granulated sugar Zest of 2 medium oranges ½ cup (113g) unsalted butter cubed, room temp ¼ cup (57g) sour cream, room temp ¼ cup (59ml) whole milk, room temp 3 large eggs, room temp 1 tsp vanilla bean paste ½ tsp pure orange extract 🍊 Preheat the oven to 350ºF (180ºC). Line the bottom of an 8” x 4” loaf pan with parchment paper. Grease & flour the insides. 🍊 In a med-sized bowl, whisk together the flour, baking powder & salt until well blended. 🍊 In a large bowl, mix the sugar & orange zest, with an electric mixer or by hand, until incorporated. Add the flour mixture & beat until well combined. On low speed, beat in the butter until the mixture looks sandy. 🍊 In a separate med-sized bowl, whisk together the sour cream, milk, eggs, vanilla bean paste & orange extract together until smooth & creamy. On low speed, gradually beat this mixture into the sugar mixture until incorporated. Beat at med. speed until smooth, about 1 min. Do not over mix. 🍊 Transfer the batter to the loaf pan. Bake until a toothpick inserted into the center of the cake comes out clean, about 45-50 min. Do not over bake. Let the cake cool in the pan for 10 min., then turn the cake out onto a cooling rack. Brush the warm cake all over with orange simple syrup. Let the cake cool completely, then frost with Vanilla Bean Cream Cheese Frosting.
