Cooking Brisket in 10lbs of Salt Going into this I had one major concern. Will the brisket be unbearably salty? In prior experiments this was not the case. I’ve done it with fish, and more recently an elk loin, and each time it came out perfectly seasoned. This time was different due to the long 12 hour cook. My thought was that exposing the meat to salt for that long would certainly ruin it, but I’m surprised to say that it was actually just about perfect. Maybe slightly saltier than I’m used to on the thinner areas, but it still was not bad. Something I’d recommend is to get the brisket in the smoker as quickly as possible once it’s covered in the salt. My feeling is this will prevent too much salt from penetrating. The other major take away is that, whether you decide to cover your next brisket in salt, you should DEFINITELY try injecting it with its own rendered fat. This was a regular choice grade brisket, and I kid you not it was juicier than anything I’ve made in the past (including a Wagyu A5 brisket). However make sure to let the tallow cool down before you inject it, and also give the brisket a long rest (like 3hrs +). Love this Beef Cheek shred from @sapp_bbq😎⁠ ⁠ "Dry aged @porterroad beef cheeks as tender as a mothers love ❤️" - 📷 @sapp_bbq << follow for inspo!⁠ ⁠ How to Make It:⁠ ⁠ 1. Coat your Porter Road cheeks in 2/1 ratio of 16mesh black pepper to diamond crystal kosher salt ⁠ 2. Heat your cooker to 275-300 degrees and put them on. I cooked these over direct heat on my @deepcreek_metalworks hot box ⁠ 3. Cook for 1.5-20 hours and then flip the cheeks and continue to cook for another hour ⁠ 4. While the cheeks are smoking melt your beef tallow at 190 degrees. ⁠ 5. Pull your cheeks off the grill or smoker after 2.5-3 hours and submerge them in the rendered tallow and into an oven set at 190 degrees to cook overnight. ⁠ 6. The following morning pull the cheeks from the tallow and let them drain off any excess tallow and rest for 10 minutes before shredding⁠ 7. Shred and enjoy!

Damit dir genau das gelingt, kommt hier die perfekte Anleitung: 1️⃣ Vorbereitung macht den Unterschied Die Schwarte rautenförmig einschneiden – aber nicht ins Fleisch schneiden. Grobes Salz sorgt später für die typische Knusperkruste. 2️⃣ Rub & Rauch Würze die Haxe mit Salz, Pfeffer, Paprika, Kümmel oder deinem Lieblingsrub. Im Smoker eignen sich Buche, Apfel oder Kirsche für ein harmonisches Raucharoma. 3️⃣ Low & Slow garen Bei 120–130 °C langsam smoken. Die Zeit macht das Fleisch weich und bringt Rauchgeschmack tief ins Innere. Mit HEIZFUXX Briketts hältst du die Temperatur stabil über viele Stunden. 4️⃣ Feuchtigkeit nicht vergessen Eine kleine Wasserschale im Smoker verhindert Austrocknen und unterstützt eine gleichmäßige Garphase. 5️⃣ Das Knusperfinale Wenn die Kerntemperatur stimmt (ca. 75–80 °C), Haxe kurz bei hoher Hitze „aufknuspern“. Beef Short Ribs on the Weber Kettle using the snake method! The @cheatmeats guys have done it again. First, trim the ribs removing any silver-skin and excess fat. Don’t forget that membrane on the back of the ribs. Set your kettle up using Weber BBQ Briquettes and light 10 to put at the start of your snake. Whilst the barbecue comes up to temp, cover your ribs in a binder to help your salt and pepper stick. Cover all sides with salt and heavy pepper. Place on Weber Kettle and cook until they probe 91-93c.
