All credit to the original creator pictured: @liveeatlearn 💛 — this is their brilliant Dump & Bake Marry Me Orzo Casserole, rewritten here for Instagram-friendly sharing. ⸻ 🧀 Dump & Bake Marry Me Orzo Casserole Creamy, cozy, and dangerously easy — this is one of those “how is this so good?” dinners. 🛒 Ingredients • 1 cup dry orzo (uncooked) • 1 cup sun-dried tomatoes, chopped (oil-packed preferred) • 1 small onion, finely diced • 2 cloves garlic, minced • 2 cups fresh spinach, roughly chopped • 1 cup heavy cream (or half & half) • 1 ½ cups vegetable broth • 1 cup shredded mozzarella • ½ cup grated parmesan • 1 tsp Italian seasoning • ½ tsp red pepper flakes (optional) • Salt & black pepper to taste ⸻ 👩‍🍳 Step-by-Step (No Pre-Cooking Required) 1. Preheat oven to 375°F (190°C). 2. Dump everything except the cheese into a greased casserole dish. 3. Stir well so the orzo is evenly distributed and submerged in liquid. 4. Cover tightly with foil and bake for 35–40 minutes, until orzo is tender. 5. Remove foil, stir in mozzarella + parmesan. 6. Return to oven uncovered for 5–10 minutes, until melty and bubbly. 7. Rest 5 minutes, scoop, and try not to fall in love. ⸻ ✨ Tips • Add chickpeas or white beans for extra protein • Swap cream for coconut milk for a dairy-free twist • Finish with fresh basil or cracked black pepper

Because I haven’t eaten meat or chicken in over 30 years, I’ve always used beans as a solid source of protein. I have also embraced the humble bean as a main character, not a forgettable side dish. Which is what I did here. #Meatless I love butter beans because of their mild, creamy, if not meaty texture. They are a nutrient-dense, plant-based protein source that are incredibly affordable and versatile. This dish was inspired by Sarah @liveeatlearn when I saw it come across my explorer page. I think I’ve done every iteration of ‘Marry Me’ dishes… but never with beans. It was a brilliant idea. Thanks Sarah! . . Tuscan Butter Beans . . 2 Tbsp of the oil from a jar of sun dried tomatoes 1/2 cup chopped onion 4 cloves garlic, chopped 1/2 tsp each salt 1 tsp oregano Pinch of crushed red pepper flakes 1/2 tsp smoked paprika 1/4 tsp black pepper 1 tbls calabrian chili paste 1 cup sun-dried tomatoes, chopped 1 cup vegetable broth 2 (15oz) cans butter beans, drained 2 large handfuls fresh spinach 1 cup heavy cream 1/2 cup grated parmesan 6 leaves fresh basil, ripped Heat the sun dried tomato oil in a large skillet and saute the onion and garlic. Add the salt, pepper, oregano, paprika and chili flakes. Cook for a few minutes or until aromatic. Stir in the sun dried tomatoes, broth and beans and cook for 5 minutes. Stir in the spinach and cover for a few minutes so the heat helps to wilt the spinach. Remove the cover and stir. Remove from heat and add the cream, broth, Parmesan and Calabrian chili paste. Rip the basil into the skillet and stir to combine. Check for seasoning. Serve with crusty bread or over rice. I like to serve with a side salad and some roasted broccoli. . . . #meatlessmeals #lentenfood

INGREDIENTS: 1/2 head of cabbage, shredded 2 chopped carrots 2 minced garlic cloves Chopped parsley 1/2 green bell pepper 1 tsp salt Black pepper to taste 1/2 cup all-purpose flour 1/2 cup cornstarch Water until soft and moldable Oil for frying Sauce: 1/2 chopped red onion 2 garlic cloves 1/2 chopped green bell pepper Salt and pepper to taste 2 tbsp soy sauce 1 tbsp ketchup 1 tbsp mustard 1 cup water 1 tbsp cornstarch HOW TO: In a bowl, combine the shredded cabbage, carrots, garlic, parsley, bell pepper, salt, and pepper. Mix well. Gradually add the flour, cornstarch, and water until you get a moldable texture. Shape into balls and fry in hot oil. Set aside. For the sauce, in a pan, sauté the onion, garlic, and bell pepper. Season with salt and pepper, then add the soy sauce, ketchup, mustard, and cornstarch diluted in water. Once it starts to boil, add the veggie balls and mix well. A weekly go-to that hits every time—spicy, savory, and seriously addictive! 😋🔥 👩‍🍳 HERE’S THE INGREDIENTS LIST, SERVES 2👩‍🍳 Sauce: 🌶 ⅓ cup low sodium soy sauce @kikkomanusa 🌶 2 tsp dark soy sauce 🌶 1 tbsp garlic (minced) 🌶 1 tsp ginger (minced) 🌶 1½ tbsp shaoxing rice wine 🌶 2 tsp light brown sugar @wholesomesweet 🌶 1½ tsp black pepper @simplyorganic 🌶 1 scallion (finely chopped) 🌶 400g firm tofu (cut into cubes) @housefoodsamerica 🌶 2 tbsp corn starch 🌶 ½ brown onion (diced) 🌶 ½ green bell pepper (diced) 🌶 1 tbsp grapeseed oil @pompeian 👩‍🍳 HERE’S THE METHOD 👩‍🍳 👉 Mix together sauce ingredients in a bowl. Combine well. Set aside 👉 Place tofu in a large bowl and coat with corn starch, cover and shake to combine. 👉 Place tofu in the air fryer and air fry at 380F for approximately 10-12 mins or until golden. Alternatively you can pan fry until golden. Set aside. 👉 While tofu is air frying, heat oil in a frying pan to a medium heat and add bell pepper and onion. Sauté for 5 minutes 👉 Add sauce and tofu to pan and cook on a medium heat for approximately 5 minutes and you’re ready to serve! INGREDIENTS: 2 large carrots, grated 2 medium potatoes, grated 2 to 3 eggs 50 g grated cheese (about ½ cup) Salt and pepper to taste 3 hard-boiled eggs, chopped and mashed 3 tablespoons of cream cheese 100 g chopped ham (about 3.5 oz) Salt and pepper to taste Arugula or spinach (optional) Cheese slices (optional) HOW TO: Grate the carrots and potatoes. In a bowl, mix them with the eggs, grated cheese, salt, and a touch of chili or pepper if desired. If the mixture feels too dry, add another egg — the goal is a soft, spreadable batter. Line a baking sheet with parchment paper and spread the mixture evenly. Bake in a preheated oven at 180°C (350°F) for around 25 minutes, or until set and slightly golden. While it cools, prepare the filling: mix the chopped boiled eggs, cream cheese, chopped ham, salt, and pepper in a bowl. Set aside. Once the base has cooled a little, carefully remove the parchment paper. Spread the filling evenly over the surface. Add a few leaves of arugula or spinach and cheese slices if you'd like. Carefully roll it up into a tight log, then return to the oven for just a few more minutes to warm through and lightly toast. One-Pot Vegetable Skillet Lasagna// This recipe has been getting a lot of love on the other app so I had to reshare! A delicious vegetarian meal option, even your meatless skeptics will enjoy! Change up the sautéed veggies using whatever you might have on hand and make it easy by using your favorite jarred marinara sauce. Love making this in a skillet, too - takes the fuss out of making a whole lasagna. #recipe 2 tbsp extra-virgin olive oil 2 carrots, finely chopped 1 red bell pepper, chopped 1 medium zucchini, chopped 1 yellow onion, chopped 5 oz baby spinach, chopped 8 oz bow tie pasta (I use gluten-free) 2 cups vegetable broth 2 cups marinara 2/3 cup cottage cheese (whip in a food processor or blender for several seconds to get a smooth consistency) 1 cup mozzarella cheese, shredded Salt, to taste In a large skillet, over medium heat, add olive oil. Add the chopped carrots, bell pepper, zucchini, yellow onion, and 1/2 tsp salt. Cook, stirring every couple of minutes, until the veggies are golden a bit softened, about 10 minutes. Add spinach, marinara, veggie broth , and pasta, and stir until well combined. Bring to a boil, cover and simmer for 10 minutes or until pasta is tender. Remove from heat and stir in whipped cottage cheese, and sprinkle mozzarella cheese over top. Cover for 1-2 minutes or until cheese is melted. Meatless Monday is my favorite day of the week 🤍🍝 Recipe ⬇️ Ingredients: •1 lb capellini •1/3 cup minced onion •4 minced garlic cloves •2 tbsp olive oil •1 large sprig of basil •1/4 cup Parmesan cheese + more to top •1/2 cup ricotta + more to top •24 oz crushed tomatoes •salt, pepper, red pepper flakes, Italian seasoning How to: Add the oil to a medium sized pan over medium heat. Add in the onion and garlic and season with some salt and red pepper flakes. Cook for a few minutes until translucent. Add in the crushed tomatoes and season with salt, pepper and Italian seasoning then add the basil. Let the sauce cook for a few minutes then add in the 1/2 cup of ricotta and remove the basil. Cook the pasta slightly under recommended cooking instructions. Add the pasta directly to the sauce and grate 1/4 cup Parmesan cheese directly in the pan with the pasta and sauce. If the pasta is too dry, add a bit of water that the pasta was cooked in. Mix everything together. Serve immediately and top with a dollop of ricotta, freshly grated Parmesan cheese and fresh basil.
