Echte Pizza beginnt nicht im Ofen – sie beginnt mit Geduld. 🍕 Für diesen Teig brauchst du nur 4 Zutaten: 1.000 g Tipo 00 Mehl 650 g eiskaltes Wasser 28 g Salz 1 g frische Hefe Die Hefe wird im eiskalten Wasser aufgelöst, damit die Gärung langsam startet und sich über 24–48 Stunden im Kühlschrank richtig Aroma entwickeln kann. Nach dem Kneten bekommt der Teig eine kurze Ruhephase, wird zu Kugeln geformt und darf dann ganz entspannt reifen. Und genau das macht später den Unterschied im Geschmack. New chef in town from Naples doing INCREDIBLE contemporary pizza with puffy, airy crust! 📍 Aperitivo, Leichhardt @aperitivosyd (by the team behind Capriccio Osteria two doors down @capriccio.sydney ) Follow for food 👉 @sydneyfoodboy Meet Christian, the new pizza chef at Aperitivo in Little Italy, Leichhardt. He started off making pizza in his home city Naples, then he worked in LA for a bit, before Michael the owner here found him on Instagram and asked if he would come to Sydney. After a long 8 months wait for his visa, he’s finally here with his wife and two young kids to do his thing. His pizza dough is mental, it’s contemporary Neapolitan style, perfect chew, extra airy and puffy on the crust (which he gets by experimenting with fermentation). But the pizza’s not small either, there’s a healthy amount of topping on there. My favourite was the 'miele' - hot salami, nduja, fior di latte, honey and stuff. We also tried the more meat heavy 'carne', and a lot of people were ordering gorgonzola pizzas actually. The 'bello' with portobello mushrooms was a hit. I asked them to measure my crust for fun it was like 7 cms whaaat! Also their entree and seafood game is pretty great. Michael has a long family history of hospopitality in Positano on the Amalfi Coast where he grew up.
