Our team spent time at Aduyon Coffee Processing with @rodyiotacdoy , a young producer from La Trinidad whose work has gained national recognition. At the Philippine Coffee Quality Competition 2025, he placed first in the Arabica Small Scale Farms category, setting a remarkable standard for Philippine coffee. The visit gave our team the chance to experience coffee beyond the cup. From observing the processing stages to asking questions and understanding the level of care behind every lot, it became a meaningful learning moment for everyone while also being a fun and memorable time in the mountains. Thank you, Rodyio, for opening this experience to our team and allowing us to see the work and intention behind your coffee. Seeing the people and processes behind coffee reminds us that every cup carries a story. These experiences continue to influence how we prepare and share coffee at the bar.

Philippines - Coffee Resurgence 🇵🇭☕ Did You Know?! The Philippines Was Once One of the World’s Largest Coffee Exporters! That’s right! Long before Starbucks popped up on every corner, the Philippines was a global coffee powerhouse. By the late 1800s, we were the fourth largest exporter of coffee in the world — and the only Asian country included in that top-tier list. It all began in Batangas, where barako coffee (Liberica) was first cultivated. Soon, the beans were being shipped to Europe and the Americas! The Philippines has the perfect climate and volcanic soil for growing four types of coffee: Arabica, Robusta, Excelsa, and Liberica — a rare feat! 🌿 But then… disaster struck. In 1889, coffee rust disease and insect infestations wiped out nearly all the coffee trees in Luzon, bringing the industry to a halt. After picking the cherries, farmers dry their coffee aiming to hit a moisture target of 10–12% for green beans. That narrow window matters more than most people realize. It’s where flavor stays stable, sugars are preserved, and the coffee holds its potential. Sadly, most coffee farmers in the Philippines don’t own a moisture meter. They check if their coffee is dry enough by touch. They bite down on it sometimes. They assess it by gut feel. And many of them are incredibly accurate. But feel doesn’t give you a number. And without a number, you risk your harvest. Go above 12%, and it will be risky for mold development. Drop below 9%, and the coffee’s flavor fades before it even reaches a roaster. Months of careful farming, lost in the last step. Now they don’t have to guess. With the help of our friends from @digitizefluid and their @coffmeter, we were able to put moisture meters directly into the hands of the farmers and cooperatives we work with, especially now, during drying season for most areas. One small tool that can drastically improve their cup quality, consistency and income.

Coffee has sommeliers too, and they’re called Q Graders. Q graders are trained to detect what makes a coffee exceptional or defective. In a producing country like the Philippines, the ‘Q’ carries a huge responsibility. Earning the Q means stepping into the highest level of coffee evaluation and care. It’s a way to prove that a coffee is ‘special.’ When quality is recognized it builds trust between roasters and farmers. In the Philippines, ‘trust’ is everything. I got to shadow Curve Coffee Collaborator’s in-house Q Graders around a robusta and arabica coffee farm in Bukidnon. Marvin and Eljean Dagohoy walked us through a cupping protocol where we tasted and evaluated coffees from around the Philippines. This is how quality becomes repeatable, and how everyone working on producing the best coffee possible finds out how to actually improve it. The clipboards were out, the slurps in, we wrote down everything we tasted. But scores aren’t the most important part. The heart of Q grading is a mission to raise both the quality of coffee and also the lives of those who produce it, recognizing that these elements go hand in hand. This local feedback loop is exactly how Philippine coffee quality keeps improving, and it’s also why the farms in this region are producing some of the most exciting coffees in the country. When farmers hold the highest standard, every cup becomes a reflection of their expertise. For an emerging specialty origin like the Philippines, it tells the world that our coffee can compete. Our quality is real. That matters, whether the end coffee drinker ever hears about what a ‘Q Grader’ is or not, because they’ll taste the difference.
