INGREDIENTS:
COCONUT SLUSHI:
1000ml water / coconut water
450ml coconut milk
Sugar syrup (3 tbsp sugar + 100ml hot water)
CENDOL JELLIES:
200g pandan leaves
600ml water
50g mung bean flour
35g tapioca starch
1 tbsp instant jelly powder (for QQ - optional)
1 tsp alkaline water (for colour to stay vibrant - optional)
¼ tsp salt
A bowl of ice bath
SWEETENED RED BEAN:
100g kidney red bean
100g granulated sugar
2 cups water (to pressure cook)
3 cups water (to soak overnight)
GULA MELAKA SYRUP:
100g gula Melaka
50ml water
pinch of salt
METHOD:
1. RED BEANS - Soak kidney red beans overnight. Pressure cook in the 11-1 NINJA Multi Cooker for 3-10 mins on low. (If prefer softer, pressure cook longer) Natural release. Then in a saucepan, cook red beans & sugar on low heat till syrupy. Can be made in advanced
2. GULA MELAKA SYRUP - With a knife, cut gula melaka into small shavings. Then in a sauce pan, add the shavings, water & salt. Cook till a thick syrup forms. Store in a jar & can be made in advanced
3. CENDOL JELLIES - In the NINJA Portable Blender, blend pandan leaves & water. Using a cheese cloth, squeeze pandan juice into a mixing bowl. Add flour, starch, jelly powder, alkaline water & salt. Pour ingredients into a sauce pan, cook on low heat & stir consistently till a sticky paste forms (be careful as it may burn on the bottom). Prepare an ice bath. Transfer the paste into cendol maker. Press cendol jellies into ice bath. Store in the fridge and can be kept up till 1 week
4. COCONUT SLUSHI - Pour santan, water & sugar syrup into the NINJA SLUSHi machine. Select the SLUSH option. SLUSHi will be ready in 30 mins!
5. TO ASSEMBLE - in a tall glass, dispense SLUSHi. Top with gula melaka syrup, sweetened red beans & cendol jellies. ENJOY !!

NO✨ KID-FRIENDLY SUSHI BAKE ✨
If you hate washing dishes as much as I do, you need this one-dish creamy sushi hack in your life. We’re doing the entire recipe in the @ninjakitchenmy CRISPi from start to finish!

INGREDIENTS:
2 (200g) salmon fillets, seasoned with salt and black pepper, to taste
1/4 cup kewpie mayo
4oz cream cheese, softened to room temperature
1 tbsp soy sauce
3-4 cups cooked sushi rice
1/4 cup furikake
toppings - kewpie mayo, unagi sauce, roasted sesame seeds, chopped spring onions
serve - nori seaweed sheets, cucumber or avocado slices
METHOD:
1. Air Fry salmon in the Ninja CRISPi glass container for 12 mins.
2. Shred salmon in the smaller glass dish. Mix in cream cheese, mayo, and soy sauce until creamy.
3. Using the larger glass dish, press the rice into the bottom, sprinkle furikake, and spread salmon back on top.
4. Air Fry for another 5-10 mins until bubbling and golden.
5. Top with your favourite topping and serve.
6. If you got leftovers, just snap the lid on and put the whole dish in the fridge. Enjoy!

Here's my matcha strawberry SLUSHi recipe (5–6 servings) 🍵🍓🧊
Matcha SLUSHi Base:
1.5L fresh milk
6 tsp matcha powder (24g)
3 tbsp honey (30g)
1) Whisk 50ml milk with 3 tbsp matcha until smooth.
2) Transfer to a measuring jar, add 2 tbsp honey and 450ml of milk, stir to mix to make matcha latte.
3) Pour directly into your Ninja SLUSHi and slush.
4) Repeat the steps one more time. Pour in another 500ml of fresh milk. Press SLUSH to start.
Lower-Sugar Strawberry Chia Purée 🍓:
500g frozen strawberries
2 tbsp honey to taste
1 tbsp chia seed
Optional: squeeze of lemon (boosts perceived sweetness)
1) Simmer strawberries on low heat for 5–7 minutes until soft. Stir in honey halfway through, press down with spatula to break the strawberries apart.
2) Turn off heat, mix in chia seeds and let it thicken for 10 minutes.
3) To assemble, drop 3-4 tbsp strawberry chia purée into a glass as the base and top with matcha slush.
