Here’s Another Summertime Recipe Oyster Mushroom Kebab @sezzy.brown ☀️🌱 You can even do this one on the grill if you like 😉 We’re telling you! you haven’t lived until you’ve cooked oyster mushrooms like this!! The texture is like super juicy tender meaty mushrooms and the mushrooms absorb every last speck of the herbs and spices. We’re telling you again this is the perfect way to have a kebab this summer!!! Here’s the recipe for the mushroom meat, save this reel so it’s yours forever 🌱 Serves 2 Approx 400 - 500g oyster mushrooms 1 tsp paprika 1 tsp garlic powder 1 tsp onion powder 1 tsp celery salt 1 tsp cumin 1 tsp thyme 2 tbsp olive oil Extra big pinch of salt Mix together all the all spices Bring a large pan to medium heat with the olive oil and add the mushrooms, cover in the spice mix and then use the base of another pan to press down on the mushrooms and squeeze out the excess water. Cook the mushrooms on medium/high heat until super crispy and most the water has been drawn out (will take about 5 - 7 minutes) I served mine in some homemade flat bread (just made from bread flour, yeast, bit of sugar, salt and warm water) and a super fresh salad with kale, onion, tomato, cucumber, parsley, lemon, salt and I would have added heaps of mint if I had any! It’s the perfect, easy weeknight main dish! 🌿🔥 Please see below 👇 for the full recipe 🌈Ingredients(for 2 people) Tender/Firm Tofu 1 kg Corn Starch 6 tbsp Garlic 3 Cloves Sugar 2 tbsp Salt 1/2 tsp Soy Sauce 4 tbsp Vinegar(Dark or Rice Vinegar) 4 tbsp Ketchup 6 tbsp Water 50ml Scallion 1 Stalk Oil 🌈Recipe 1.Cut tofu into cubes(about 2cm*2cm),add 5 tbsp corn starch and coat the tofu with corn starch. Cut garlic and scallion into small pieces. 2.Get a bowl, add sugar, salt, soy sauce, vinegar, ketchup, water and 1 tbsp corn starch, mix it well. 3.Heat up the wok(medium heat), when it’s hot enough add oil, add tofu, pan-fry until both sides are golden then take them out. Glorious BBQ Tofu Steak @vegandiaries___ 🥵🌿 It's literally as simple as dressing up a regular BBQ sauce with some spices and flavouring then baking it in the oven! So fun and so tasty! 🌿 Please see below for the full recipe 👇 BAKED BBQ TOFU Serves 2 300g extra firm tofu, pressed for 10 mins BBQ Sauce - these are rough estimates, taste as you go and adjust to your preference €$ 1/3 cup bbq sauce (just the cheap stuff - Fountain, Masterfoods or similar) 1/2 tsp granulated onion or onion powder 1/2 tsp garlic powder 1 tsp smoked paprika 1 tsp apple cider vinegar 1 tsp sriracha 1 tsp Worcestershire sauce (check it's vegan friendly traditional varieties have anchovies) 1/4 tsp mustard powder METHOD 1. Preheat oven to 200C. Fillet tofu on the diagonal, being careful not to cut all the way through. I did this on both sides in opposite directions for effect, but just filleting on one side is also fine. 2. Brush tofu with BBQ sauce and bake for approx 20 mins, brush with extra sauce half way through. Brush with sauce once more then move under the grill on high for 5-10 more minutes until the edges are slightly crispy and very sticky. 3. Top with a little extra sauce straight out of the oven. Cut into portions and serve immediately with greens.
