Ingredients
Chicken
1–1.5 lb chicken breast, cut into small bite-size pieces
Marinade
¾ cup buttermilk
¼ cup pickle juice
1–2 tbsp hot sauce
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp paprika
Crispy Coating
1½ cups all-purpose flour
2 tbsp cornstarch
1 tsp salt
1 tsp black pepper
1 tsp paprika
1 tsp garlic powder
Chick-fil-A style sauce
½ cup mayo
2 tbsp BBQ sauce
1 tbsp honey
1 tbsp yellow mustard
1 tsp lemon juice (optional)
Oil for frying
Instructions
Mix all marinade ingredients in a bowl until smooth. Add chicken and coat well. Cover and marinate for at least 1 hour, or up to overnight for best flavor
In another bowl, combine flour, cornstarch, salt, pepper, paprika, and garlic powder
Take chicken straight from the marinade and coat in the flour mixture, pressing firmly to create texture
Let coated chicken rest for 5–10 minutes
Heat oil to 340–350°F. Fry in batches for 3–4 minutes until lightly golden. Remove and rest for 2–3 minutes
Fry again for 2–3 minutes until deep golden and ultra crispy
Drain on a wire rack and serve hot
In a small bowl, mix mayo, BBQ sauce, honey, mustard, and lemon juice until smooth. Chill for 30 minutes for best flavor
Serve with the sauce and enjoy ✨

BYCrispy Chicken McNuggets with Hot Mustard Dip
Ingredients
For the Chicken:
2 lb ground chicken (or chicken breast processed in a blender until pasty)
1 tsp onion powder
1 tsp garlic powder
1 tsp white pepper powder
salt to taste
1 tbsp cornstarch (to help with shaping)
The Batter:
½ cup all-purpose flour
½ cup cornstarch
1 tsp baking powder
1 tsp cayenne powder
1 tsp garlic powder
1 tsp white pepper powder
1 tsp salt
1 egg
½ cup to ¾ cup ice-cold sparkling water
For the Dry Dusting:
1/2 cup cornstarch
Hot Mustard Dip:
1/2 cup mayonnaise
2 tbsp Yellow mustard
2 tbsp Dijon mustard
2 tbsp Honey
1 tbsp White vinegar
1 tsp Dry mustard powder
½ tsp Cayenne pepper (adjust for spice level)
¼ tsp Garlic powder
¼ tsp Onion powder
Method:
Mix the chicken base ingredients. Wet your hands slightly and shape the mixture into those classic “boot” or “oval” shapes. Place them on a parchment-lined tray and freeze for at least 1 hour. This is the secret to keeping them from falling apart in the batter.
Mix the Batter: Whisk the flour, cornstarch, egg and seasonings. Slowly pour in the ice-cold sparkling water until you have the consistency of heavy cream. Keep the batter cold—if it warms up, you lose the “crispy” texture.
Before battering, lightly toss the frozen nuggets in a little extra cornstarch. This acts like a “glue” so the wet batter doesn’t slide right off.
Dip the frozen nuggets into the batter and drop them into the oil.
Fry for about 5 minutes until pale gold. Remove and drain.
You can also double fry (optional): increase heat amd flash fry them for 1 - 2 minutes until deep golden brown and loud-crunchy.
