This is my go-to juicy chicken breast marinade that works even without oil 👇 Marinade for 500 g chicken breast: • 1 tbsp chilli powder • 2 tbsp peri peri masala • 1 tbsp pepper • 1 tbsp chicken masala • ½ tbsp ginger garlic paste • ½ tbsp lemon juice • 1 whole egg 🥚 • Salt to taste Mix well, coat the chicken properly, refrigerate for 30 minutes and air fry at 190°C for 10–12 minutes. No curd. No oil. No dry, rubbery chicken. Just tender, juicy, protein-packed chicken breast every single time. Trim excess fat from the chicken thighs. Add seasoning, fresh parsley and coriander, lemon juice, and olive oil. Mix until evenly coated and let marinate if time allows. 2. Line a sheet pan and spread the marinated chicken in a single layer. Brush with peri peri sauce and lightly spray with avocado oil. Bake in a preheated oven at 200C / 400F for 22-25 minutes until golden and juicy. While it cooks, boil the pasta, drain, and set aside. 3. Remove the chicken and keep all the pan juices. Add chopped onion and bell pepper, toss in the juices, spread flat, and roast at 180C / 370F for 15 minutes until soft and lightly charred. 4. While pan is hot, add extra seasoning, tomato paste, cream cheese, milk, peri peri sauce. Mix gently until melted creamy - the residual heat will help emulsify sauce. If needed, return to oven for 5 minutes. 5. Stir in cooked pasta and parsley until coated. Coming in 2nd place we have Saucy Chicken 🤩 Feels like we all need recipes with chicken 😂 Saucy Chicken 8 -10 pieces of chicken I used legs and thigh with the skin on Zest and juice of 1 lemon 3-4 cloves garlic Few sprigs of thyme but only the leaves 4 tbsp olive oil 1 tsp each of: Salt Garlic powder Onion powder Paprika Mixed herbs Cumin powder 1/2 tsp white pepper 1 tsp mustard Blend the above spices and mix 3/4 into the chicken and marinade for a few hours. Bake on 190 degrees for 30-45min until fully cooked. To make the sauce combine: Marinade 2 tbsp butter 2 Peri peri sauce 1 tbsp Lemon juice 1 tsp garlic 1 tbsp mayo 1/4 cup fresh cream Heat on the stove, mix through and pour over chicken once cooked.
